I'm a mom of one picky 3 year old. Fortunately everyone else I know loves to eat. I like to come up with my own recipes and change them little by little until they're perfect.
My favorite things to cook
I love to cook Asian cuisine. Seems like when I'm thinking of something new to cook, adding one ingredient at a time, it starts to sound like an asian dish. I also love to bake - cookies, muffins, cakes, even complex candies. Being a nurse and a mom, I also like one dish meals that are easy to assemble but combine just the right flavors to entice a picky 3 year old.
My favorite family cooking traditions
I have perfected the breakfast crepe recipe that my father taught me. You'll never get him to admit it, but they are better than his!

Bacon Ranch Pea Salad
Love this! Our family is on the South Beach diet so we modified it a bit. I used South Beach Diet Ranch Dressing by Kraft which is low carb and sugar free. I also used green onions instead of red. And hormel ready bacon pieces. Talk about fast and delicious! Big hit. Think I'll try ham cubed next time instead of bacon.

Baked Macaroni and Cheese I
This was a huge hit with my family. My 3 year old son was even asking for seconds. I however, made a few changes out of necessity. First off, I didn't have any onion so that was omitted. Then because I was too lazy and short on time to defrost and cook any bacon, I chopped up some presliced pepperoni. I sauteed the roni with the garlic and drained off the extra grease. Then I didn't have enough cheddar cheese so I mixed in Monterey Jack and Mozzerella. I also was a bit worried when I mixed it all together and it seemed too runny so I baked it for an extra 10 minutes (30 minutes total). Absolutely, hands down, THE best mac and cheese recipe on the site!!!
