Microwave Cashew Brittle

Reviewed: Dec. 23, 2009
My husband can't get enough of this stuff! We went to Sams and he insisted we buy a jumbo size container of cashews so I can keep making brittle just for him (instead of as gifts)!!!! The candy does come out really thick, and is hard to spread- but it doesn't matter... its worth it!

Cheddar Artichoke Quiche Cups

Reviewed: Dec. 23, 2009
Not very good. I doubled the recipe and baked in a pan to bring as an appetizer to a party for ease of transporting. I reduced the cheese per recommendations. The recipe didn't have much flavor to me.

Easiest Peanut Butter Fudge

Very good. Easy to make. I used a mixer to make it creamy and smooth. Not to sweet, which is good. This is a keeper.

Fettuccini with Mushroom, Ham and Rose Sauce

Reviewed: Nov. 4, 2009
Very good. I couldn't wait until it thickened and simmered down because we were hungry and it looked so good, but you know what... it didn't matter.... it was still delicious! The only change I made was I added a little Parmesan cheese to the sauce. The ham I chose to use was a smoked ham from the deli that I had cut thick, it had a peppered outside and added a nice depth of flavor. Very good dish. I used different pasta and not fettuccine because of my preference.

Crescent Beef Casserole

Reviewed: Nov. 2, 2009
This was pretty good. The more I ate it the more I wanted. I followed some suggestions and browned the mashed potatoes in the pan first to make the crust firmer. I added garlic to the veggies and found I needed a bit more tomato puree than stated. (about 2 cups once simmered). For feta I used the tomato and basil flavored kind and it seemed to add a nice flavor. I will make again.... if I change anything next time it will be to use tomato paste and sauce instead.

Cranberry Apple Bread

Reviewed: Nov. 2, 2009
Very tasty! The batter is thick like a cookie dough, but I wasn't scared and went ahead and followed directions. Came out wonderful! Didn't change a thing and I'm glad. I will definitely be making again One note: when I cut into it, it wasn't done. Needed more cooking time than stated.

Apple Dumpling Cake

Reviewed: Oct. 25, 2009
Loved this! The only changes I made were to add some brown sugar on top of the apples and to top the batter with cinnamon sugar. Very good! Loved the apples, they were tender and sweet and the "dumpling" part was really tasty! I will definitely make again.

Chocolate Pudding Fudge Cake

Reviewed: Oct. 24, 2009
Yummy and very very chocolaty. Reduced amount of chocolate chips and didn't make the glaze as it was so rich without it, I felt it didn't need it. Mine needed to be baked a bit longer than it stated. Nice treat and very easy!

Very tasty. I did make minor adjustments, added a tablespoon of chicken soup base to richen the broth. Also added onion to the soup. Cooked the orzo separate as recommended by others. Very very good!!! Will make again!

Chicken and Bowtie Pasta with Asiago Cream Sauce

Reviewed: Aug. 11, 2009
Very tasty. Used half and half. Increased chicken to 1.5 pounds, mushrooms to 2 containers of presliced from the prodoce dept and more prosciutto and it made a TON OF FOOD! I needed a little more sauce for the dish since I increased some of the ingredients so I added a bit of parmesan since I ran out of asiago. Turned out wonderful... a real hit at this house!

The Whole Jar of Peanut Butter Cookies

Reviewed: Aug. 1, 2009
Very tasty! I undercooked as recommended. I also suggest leaving on the cookie sheet a few minutes to cool before transferring to the cooling rack. The second time I made them I added chocolate chips and they were very good also! One more tip I followed was to roll dough in a tube to chill and then slice to bake. Worked well with less fuss and mess.

Very good. Omitted almonds, as I didn't have any on hand. And used lemon Zest instead. Sprinkled tops with sugar before baking. Mmmm....

Very tasty. Used another reviewers idea and rolled into a log and sliced dough. Worked out well. When cooled, I dipped rounds into dark chocolate and chopped walnuts for a pretty finish. Delicious too.

Easy Deviled Chicken

Reviewed: Mar. 6, 2009
Pretty good, but I think I may have bought the wrong stuffing mix. I used the kind in a bag. I liked the flavor, and did reduce cooking time as a reviewer suggested to 30 minutes covered and 15-20 uncovered. I may try again with stove-top next time to see if the crust comes out better. Mine was very chunky even though I crushed the croutons to the best of my ability.

Great flavor. Added a touch of white wine and used cooked shrimp instead of raw. Served mixed in with linguine. Was a hit with the family! Will add to my regular rotation of meals.

Slow Cooker Dump and Go Cheesy Chicken

Didn't care for the flavor. I did vary the recipe, so it isn't exactly as it called for. I used 2 cans cheddar soup and 1 can cheddar broccoli soup. Added 1 bag frozen broccoli. My family gave it mixed reviews.

Italian Sausage Soup

Reviewed: Mar. 3, 2009
Wonderful! I have never had much success making soup, but this one turned out great. I added red bell pepper and ditalini and about 1.5 teaspoons of Ms Dash Italian Seasoning. Yummy! Family loved it... hardley any leftovers! Next time I will add more onion and more garlic, as I love those flavors.
