World's Best Lasagna

I know that you are supposed to love your Mom's lasagna the best, but this recipe leaves my Mom's lasagna in the dust. It is the best lasagna I have ever had!

Sean's Falafel and Cucumber Sauce

I really really wanted this recipe to work, but it fell apart. Even after taking out an extra cup of the breadcrumbs it was so very dry. I think if I had added a third egg it might have worked, or not added any breadcrumbs at all. I did bake them, and substituted baking soda for powder. The taste was very good (other than the dryness). I think maybe climate? might play a part. I live in a very dry state, and maybe that was a contributor? I will definitely try these again in hopes of a better turn out.

Healthy Garden Salad

Followed the recipe exactly other than adding an extra clove of garlic (because we like garlic a lot). It actually didn't need the extra garlic clove, and I don't really think that it needed any changes at all. Wonderful recipe and was an absolutely beautiful assortment of colors.

Thai-Style Tilapia

Amazing meal, but unless you have to, don't skip the lemongrass! I made it without it, and wish I had run to the store to get more. Served over rice and it was delicious.

Vegetarian Sloppy Joe's

In the end the general consensus in my house was that this was pretty good, but probably won't be made again because the 20g of fat is more than we would like, not because it wasn't good though. It did need a few modifications. After I had followed the recipe exactly and sampled the results I was pretty disappointed. As other reviewers have said it needed more tomato sauce, and I added about an extra tablespoon of Worcestershire sauce. It was terribly dry and definitely did not resemble any sloppy joe I had ever had. With the additions it was much better, and as leftovers actually seemed to be much more tasty than the initial serving.

Brazilian Fish Stew

This was a fabulous dish. My husband is not much of a fan of fish, but he ate plenty of this. My only regret is that I couldn't find my paprika while I was making this and it did seem to need something more. Won't hold my lost spice against it though. :) Loved how simple it was to prepare, and was surprised that something so simple was a flavorful as it was.

Mostaccioli Bake

This is a recipe I have used several times for making up frozen casseroles to be served later. It freezes beautifully. Changes that I made include doctoring up the spaghetti sauce for a little more zing, including sauteing garlic, onions and a little oregano and parsley. My mom always made lasagna by mixing ricotta and cottage cheese, and it was nice to run across a recipe that used the cottage cheese it was a nice addition to the texture. I did find that I needed a little more sauce for the amount of pasta called for, but that may have been resultant of the freezing/ reheating process. All in all a great recipe. Thanks!

Ginger Glazed Mahi Mahi

I was not quite sure what to think when I first tried this recipe as it is pretty different from what I usually cook. Four bites in and I was impressed, ten bites in and I was in love. I couldn't get enough of the sauce, and will definitely make this again. With as easy as it was to prepare it is something you could make often. Served this with snow peas and water chestnuts sauteed in sesame oil as a side dish. Supergood, and healthy to boot!

Superfast Asparagus

It feels strange to give something with two ingredients five stars, but it was so easy and tasty you wouldn't have known it was only two ingredients. My husband is a little biased against veggies, but he ate this and LIKED IT!! Great idea. I think I will try Cajun seasoning on other veggies too!

Strawberry Spinach Salad I

WOW.. it is obvious why this recipe is ranked so well. I do agree though that cutting the sugar amount in half is a good idea. I also found that I needed more spinach than the recipe called for so I used one of those bags of mixed greens and it worked very well. I think that the best part of this recipe is its versatility. My sister has been making a similar type salad for years, and she uses grapes, mandarin oranges, sunflower seeds, cubed chicken breast etc. Today the addition was small cubed white sharp cheddar, and I think it would do well with most any white cheese. However you end up doing it though, it is a keeper!!

Curried Coconut Chicken

This was awesome! I love curry, and am mostly used to a more Indian style curry, but this was spectacular. Needs to be served with rice or veggies or something but not by itself. It has quite a bit of sauce that requires it. Also freezes and bakes up very well.

Hot German Potato Salad III

I followed the recipe exactly, and it was awesome!! I do think that it needed more of the sauce and less potatoes. Also, don't serve it cold. I thought it would be just as good cold, and it was not even close. Needs to be eaten warm.

Pancho Villa Baked Tilapia

This is an interesting blend of flavors. I think it is a good base for something, but I didn't like it very much. Maybe changing out the canned tomatoes and chilies for fresh? I think mostly I didn't like the mixture of fish and tomatoes. The recipe was supereasy though, and clean up was a the fastest ever.

This is the beginning of a really good recipe, but isn't quite there yet. I added more peanut butter and peanut sauce, and then served it over basmati rice. It could have used some coconut milk.. or something.

Honey-Spice Acorn Squash

The BEST squash recipe I have ever had.. hands down! Somehow the honey just worked much better than brown sugar ever has, and I feel a little better using honey vs. sugar. The ginger added to the cinnamon was a more complex flavor than the cinnamon by itself, and a vast improvement. Going to make this again!!!

Mack's Tunaburgers

I had my husband rate this cause it turns out the teriyaki sauce is pretty strong (could have been the brand we used). I don't like terayaki but he does, and said they were a four, only because he has had better. Superfast to make, and all stuff that you always have on hand. I would give them a five for prep.

African Chicken Stew

This was so good. Will definitely make this again. I did as another user suggested, and added carrots and celery, mostly for color. Also added a bit of tumeric for color. Loved this!!
