Orange Cake

LOVE LOVE LOVE this recipe! Delicious cake without a hint of that came-from-a-box flavor. I added 2 t. of orange extract, used a butter cake mix and vanilla pudding. I made it in two 9 inch layers (24 minutes at 350)and frosted it with cream cheese/whipped cream frosting from this site adding 2 t. of orange extract and about 1T of orange zest. It is out of this world! YUM and thanks for a truly wonderful super easy recipe!

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

Perhaps it was the unsalted butter, but these cookies did not work out for me. They were flatter than pancakes despite my very best efforts at following the directions precisely in my VERY OWN quest for the perfect chocolate cookie. I was so hopeful I was practically chanting Felix's name as I spooned them onto my parchment paper lined pan. (Was it the parchment paper?: ) At the end of the evening, I had a whole lot of cookies to show for my efforts, but not one of them was the perfect cookie that was promised. I still honor Felix for his efforts to tinker with his recipe in search of perfection even if our stars (and measuring cups) didn't align.

Hazelnut Chocolate Chip Scones

If I could give this recipe more than five stars, I probably would. Perfect texture, nice combination of sweetness, SUPER YUMO! Only change I made was to decrease almond extract to 1/2 t. and bake on parchment paper for a snappy clean up. This recipe is also a perfect base for different combinations. I used cherries and toasted sliced almonds. You could use anything. LOVED THIS RECIPE!

Italian Sausage Soup with Tortellini

Awesome, zesty soup. I finished my batch by pouring the soup into individual casseroles, topping each dish with mozarella, and broiling it until it was slightly browned and gooey. YUM! THanks for the great recipe!

Cajun Chicken Pasta

While it may be putsy, I used boneless, skinless chicken breasts, rubbed them with the Cajun seasoning and grilled them. I cut them into strips and layered them with the pasta, sauteed asparagus and red onion. AWESOME! This recipe is so versatile that you can just toss in whatever vegetables you like.

Parmesan Puffs

To avoid sticking, use parchment paper to bake these tasty little treats. I used a hotter oven, 400 degrees, and shortened the cooking time to about 18 minutes. I added minced garlic, (1 large clove), 1/2 t. ground pepper, and 1 t. ground Italian seasoning. They were excellent fresh out of the oven.

Spicy Mexican Salad

Great salad with a few additions. To zip it up a bit, I mixed the catalina with equal parts sour cream, a heaping teaspoon of taco seasoning and thinned it with lime. To the salad I added red onion (1/2 cup) and cilantro (a good handful). There was nary a leaf of romaine left in the bowl!
