I am a college student and my mom has diabetes, I've learned a lot about nutrition through her health struggles and carry those healthy habits to me and my roommate! However, I would not call my diet perfect. I am a strong believer in everything in moderation. I don't eat low fat cheese, except cream cheese. I think whole wheat bagels are good for lunch sandwiches, but they don't hit the spot for breakfast. I eat asiago cheese bagels with breakfast. That reminds me, I never skip breakfast! But I rarely eat breakfast food for breakfast.
I believe everything can be brought for lunch. I bring homemade pizzas, pastas, lettuce wraps, stir frys, whatever. Baked chicken strips are fantastic though if your looking for ideas. I make crazy sauces for us also :)
My favorite things to cook
Squash, pastas, salads and big appetizers. And if you give me a brick of good cheese, I can find something to do with it. Smoked gouda and chevere are my favorites :)
I love making a big bowl of salad with a quick bread like focaccia. I simply season my breads with olive oil, salt, pepper and rosemary. If I need a dipping sauce, I make a quick marinara with crushed tomatoes, salt, pepper and a couple tablespoons of pesto. A couple cubes of good cheese never hurts with that kind of dinner ;)
My biggest comfort food is mac n cheese. I'm not that picky, it's always delicious!
My favorite family cooking traditions
My mom makes the most amazing baked omelet every Christmas morning. She's great at making pies, I'm terrible at them. Whenever my dad makes dinner, it's spaghetti. The sauces comes from a seasoning packet, ground beef, and plain old spaghetti. It's not too bad, it just makes me laugh.
My cooking triumphs
I've mastered my buffalo wing recipe - which makes my boyfriend verryyyy happy. (They are boneless, white meat, but still deep fried.)
But I'm even happier with my granola bar and fruit smoothie recipes!
My cooking tragedies
My first time deep frying ended with a ruined pot, a hole in my mom's favorite rug, and a burn on each of my dad's hands. Oh -- and my brother and I got in a fight.
