I had to try this recipe. Cmon with 2100+ reviews there has to be something to it! I think its funny how when people review the recipe they mess it up but then add the part where they've been cooking/baking for x amount of years. I tried this blueberry muffin recipe and when I was done with my batter, I realized that it was stiff. So common sense would tell you to add more liquid. I think this recipe is great. However my family prefers no topping just muffin so I ixnayed the topping altogether.
I did two batches, the first one with a little bit of extra liquid. I have to substitute dairy for soymilk (daughter's allergies). Then the second one I did as other reviewers recommended and added 1/2 cup of oil and 1/2 cup of milk (again soy) and a tsp of vanilla. This is what I found.
I enjoyed both recipes. The original recipe was better with an addition of liquid. The reason I enjoyed it was because the tops crisped really nice.
If you're looking for fluffy the alterations of 1/2 cup of oil and 1/2 cup of milk is for you. The second batch was good, but it was missing the crunchiness that the original recipe had which I totally enjoyed. Hope this helps and thanks for the recipe!
