Garlic Butter

Very good! i cut it down to three serving because I really try not to eat that much butter all the time. i also used garlic powder because that's all i have and a dash of sea salt. I think you are suppose to use unsalted butter for this recipe. i spread this on a baguette i made right out of the oven...heaven!

Crusty French Bread

WOW! so i loved this and this is my first time making bread successfully. I used the rising instructions for the kalamata olive bread though, which you warm the bowl first for the first rising and then the second rising u put it in a prewarmed over (at 150) for 30 min. Speed up the process alot. I also added probally 1/3 cup parmesan cheese and a little garlic powder. I used the garlic butter recipe to put on the bread...yummy!

Curried Spinach Soup

This was good and comforting. I made this for a sunday supper at a freinds and even the non veggies easters liked it. I love curry so that's probally why i liked this so much. I made a few minor changes, i sauteed yellow onions and garlic instead of the green onions and added a pinch of red pepper flakes. Instead of sour cream, I used non fat greek yogurt just because I like the taste better and its so healthy for you.

BUSH'S® Pumpkin Bean Burgers

These were good and very easy to make. The recipe is good as is or is very easy to change up as well. I made it the first time following the directions but adding a little bit of liquid egg whites. The second time since I didn't have onions, I sauteed crimini mushrooms, garlic and a bunch of baby spinach and threw that in the mix. I used less garbanzo beans (bc i was short) and a little more pumpkin. It was great this way as well (i preferred more due to my tastes). so have fun with the recipe and be creative.

Baked Pesto Chicken

What happened?! I did not like this and I like pesto and chicken so I thought together would be great. The chicken seemed tuff and not very flavorable. I did make my own pesto sauce, but that shouldnt have been the problem since it tasted great seperate from the chicken. I marinated it for an hour too. Maybe the chicken I used just want that great?

Whole Wheat Blueberry Pancakes

I'm sorry but i did not like these and am wondering what I did wrong because there where so mnay good reviews. I love whole wheat flour more than white too but these had a weird bitter taste to them and all my baking supplies are newer and have been used before so I dont think that is the problem. m The only i did differently was rubbed oil on the pan ibnstead of using spray.

African Peanut Soup

This was a good soup but not the best I've ever had. I liked the flavors and it was comforting. I followed the recipe exactly except I added some more spice to my taste. So I upped the chili, red pepper, red pepper flakes and cumin. I could taste the peanuty flavor with the recommended amount and I also added french green lentils with the rice because I thought they would be good in it and have alot and cooked it longer. Also because of what I had on hand I subsittuted wild rice medley (good)and fire roasted diced tomatoes (recommend this change). Also which I think helped the flavor alot is I used fresh ground peanut butter from my neighborhood grocery so the peanut taste was very fresh and strong. On a personal note, to anyone who buys reduced fat peanut butter, don't!!! It's horrible for you and peanuts have good fat in it for you and your replacing it with more sugar and corn syrup instead when you do that. Sorry personal rant for the day.

Pumpkin Cheesecake Bars

This was good, I brought it to a party and everyone enjoyed. I even liked this and I don't care for cheesecake or pumpkin pie, the flavors mellowed each other out a little for me. i followed the recipe exactly.

Cream Cheese Frosting II

I hate frosting but I liked this. Usually I think frosting is so sickenly sweet. But I used this on a carrot cake and it went great. If you like more of a cream cheese taste that doesnt taste like sigar I recomment this. I broke my mixer though so mixing this by hand was not fun.

Carrot Cake XI

I made this for someone's bday whose favorite is carrot cake. I've never liked carrot cake but I actually liked this. I did half applesauce/salflower oil and added just a little nutmeg. I covered it up with foil as soon as it came out of the oven to retain all the moisture and I loved how it was so orange from all the carrots. Update-I stil had carrots left over so decided to make a loaf (i halved the rcipe)for my dad using the same recipe. I wanted to make it healthier so I subbed all applesauce, used whole wheat flour, 1/2 brown sugar, 1tsp vanilla, and a generous dose of cinnamon and nutmeg. When it was almost done I poked holes on the top and drizzled 2 tsp of melted butter with cinnamon on top. I actually liked it better with the whole wheat flour.

Ginger Glazed Mahi Mahi

this was good and i didnt think i'd like it since im kind of tired of the soy sauce fish recipes. I did add rice vinegar for half of the soy sauce and used only one tbsp of honey and 2 cloves of garlic. I defiently licked my plate afterward!

Indian Chicken Curry II

Yummy! So I didnt have everything so I had to modify (sorry). I used almost 2tbsp curry(almost out) and for the rest used tumeric and cumin. I didn't have an onion (would have made it better) so I added white kidney beans with the chicken. I also upped the tomato paste(3 tbsp) a little and didnt used any coconut milk (healthier plus didnt have any). I also added about a cup of frozen spinach. And at first I thought the cinnamon was too strong but after you add the lemon and cayenne pepper it milds it out, but I woul probally use less cinnamon next time. Again sorry I changed so much but just shows this has great structure and you can modify easily.

Cinnamon Pudding Cake

mmmm perfect for me! I love cinnamon and this was so good. I didnt make it exactly just bc i didnt have enough sugar. so i think i used about 3/4 cup white sugar and probally the same in brown sugar. Because I didnt have enough brown sugar used one cup water and same amount of butter. I thought it was sweet enough this ways as well. Used half whole wheat flour and added 1/2 tsp pumpkin spice and full amount of cinnamon. Oh ya and I also used unsweetened almond breeze instead of milk since I cant have dairy so very easy to make this recipe VEGAN! Ok so bad about to have slice number 3

Ok first ill say i made modifications that the others used, 2 eggs no baking soda. these are super rich and good next time though I would add less sugar as these were a little on the sweet side

Blueberry Coffee Cake I

This was great. My dad ate several pieces and he's not much of a sweet eater and i brought some into work and my boss said it was the best he ever ate (he loves blueberry coffee cake) and this is from the pickiest person i know. I did make modifications: 3/4 c milk, 2 eggs and half the strusel in the middle. I also noticed the blueberries sunk a little bit in mine probally because of extra liquid.

Delicious Raspberry Oatmeal Cookie Bars

I made these three days ago for a BBQ. and they are still good several days later. I read that some people had problems with it being more crumbly and not sticking together. What I did to prevent this is make sure I pressed down on both layers and then when it come out you need to make sure it cools all the way, I did for 2 hours because I read that on another similar recipe. I didnt have any problems with it staying in bar form. I also added sliced almonds to the top layer.

Whole Wheat Beer Bread

YUMMY!...this taste like Great Harvest Bakery Bread (might just be local). I used 1/2 cup old fashioned oats, 1 1/4 c each of the other. I also used Redhook's Blonde Ale (Seattle brewery. I sprinkled some oats on top and then poured 1/4 c melted butter on top. I baked 50 minutes and then covered it with plasti wrap for 30 min(as someone else recommended) I believe this holds in the moisture. I might have to leave the house so i dont polish off the rest of it...

Blueberry Cornmeal Pancakes

I made these for myself and really liked them, they do have a heavier buckwheat taste which I like but I might not serve them to other people who are more into all american pancakes. I made these healthier by using fax seed in the recipe and instead of using syrup I sauteed strawberries with vanilla soymilk mixed with a big of cornstarch and spenda in a pan which made a creamy sauce to pour over.
