About this Cook
I was a young single mom who in late 2007(throughto present) has found myself in an amazing relationship with a man who has 4 kids...collectively we have 5 kids so cooking for me has taken on a whole new meaning (not to mention the amount of serving sizes!! yikes! hahaha. On an updated note,in June we are having a new addition to the family.... now we are a family of 8! WAHOO! I am outgoing, adventurous and known to make people smile and laugh. I love to help and try new things...always looking for new friends from all walks of life from all over the globe :)
My favorite things to cook
Baking --> Gingerbread cupcakes with cream cheese frosting, banana brea/muffins, pie Cooking--> I am a novice @ cooking but so far I have made a lasagne to feed 10 and shepherds pie (so easy) and steak (yummo) I also enjoy butter chicken
My favorite family cooking traditions
My Mom's Cheesecake, a recipe that she got from my aunt.... I adore it and we only get it if we are lucky once a year....
My cooking triumphs
I'd have to say cooking (anything)for 7+ because its a lot different than cooking for 2 or 1. In which case it would be my first lasagne (ever)on April 1 2008. My classic Sheperds pie which I am always altering ingredients and the first steak I made in March 2008. October 2008 made my first set of pies (all sugar free) which were a pumpkin and apple pie.
My cooking tragedies
The death by chocolate cupcakes I made for my dad....everything was from scratch and they were so hard you could break windows....the blue icing melted and looked gross....absolutly horrific but hilarious...my mom tried to eat one...when she dropped it on the plate I thought it was going to break....we laughed so hard we cried.

Cindy's Pumpkin Pie
Great and easy recipe. We have a diabetic in the family so I used Splenda white sugar and I used "Breyers Sugar Free French Vanilla" ice cream (it may have been called "no sugar added"). This gave the pie a different texture, it was a lot softer and.... foamer?! The kids loved it and so did my man. My mother AND sister asked for the recipe which for a first time pie-baker made me quite smug. :) Enjoy

Roast Beef and Gravy
The first roast I EVER made I used this recipe which was summer 2008. What I learned was with this recipe it ended up being very salty (and by very salty I really mean WICKEDLY salty) so I started to make my own modifications. SO what I usually do is: sprinkle the roast (lightly)with Montreal Steak Spice before anything else. I use 2-3 cans of cream mushroom soup (its usually a BIG roast due to big family with big appetites) with one can of cream of celery soup (I try to go for everything either fat or salt reduced). I mix up one package of onion soup OR alternatively chop up a smallish onion and put it in there. I mix all these "wet" ingredients together. Sometime I add in a little bit of garlic or garlic powder if i am in a garlic-y mood. Then pour it all over the roast and leave it for 6 hrs or so. Serve with either mini potatoes and veggies OR make hot beef sandwiches/buns (which is what we usually do with the leftovers... in the rare instance there is some). If the gravy looks a like we don't have we usually end up adding "flour" water (to thicken or add more volume) or just water to help reduce the "saltiness" of this.

Gingerbread Cupcakes with Cream Cheese Frosting
I adore this recipe, 2006 I went on a cupcake rampage and baked dozens upon dozens of cupcakes...found this recipe and was an instant hit with the extended family!!! I try to make this most of the October - December season though sometimes treat the fam throughout the year!!! absolutly deeeeeeeee-licious!!!
