Eclairs II

Reviewed: Oct. 27, 2009
Delicious! I just made the eclairs - used a different recipe for pastry cream, and I just dipped the tops in melted chocolate so that it would dry hard. Delicious. Thank you!

Three Cheese Garlic Scalloped Potatoes

Totally incredible. I used different cheeses, because that's what I had. It came out so creamy and delicious - the sauce was almost like Alfredo sauce. Fantastic. Thank you!

Pastry Cream

YUM. I made it non-dairy, using soy milk. You can taste the difference, but it's still incredible. I used a whisk for all the mixing and got no lumps. I didn't have corn starch; I used potato starch instead - no problem. Thank you!

Rich Chocolate Frosting

Delicious. The recipe said no substitutes, but I wanted it non-dairy, so I used margarine and soy milk instead of butter and milk. It is still creamy and light and chocolate-y and delicious. Thank you! :)

Poppy Seed Bundt Cake I

Reviewed: Jun. 20, 2009
It was okay; I didn't love it. It was dense and moist but had a peculiar flavor. I did make substitutions - I wanted to make it non-dairy, so I used margarine instead of butter and soy milk + lemon juice instead of buttermilk. And I didn't use cinnamon because I don't like it. Tested ready at 40 minutes in the oven. Came out looking beautiful - love the sugar crust on top.

Chocolate Chip Cookies Lite

They're not cookies, they're cakes :( Very spongy, not crunchy or chewy, which cookies are supposed to be. I'm disappointed :(

Raspberry Cheesecake

Reviewed: May 30, 2009
I will never buy cheesecake in a store again. To die for. Everyone loved it, couldn't get enough. I crushed shortbread cookies and poured melted chocolate over them. I didn't have raspberry preserves, so I just defrosted and liquidized frozen raspberries. This resulted in an unstable structure, because the raspberries were too fluid, but next time... I will make individual "cheesecake trifles" in glasses - layer the cookies, cheesecake and fruit, which will give a beautiful presentation but no trouble with the instability. CAN'T WAIT.

Apple Crisp IV

Reviewed: May 10, 2009
Delicious. I made it with apples and frozen blueberries. What was great about this dessert is that it kept its shape when cut into squares, so looked good on the plates. Unlike other crumbles, which... crumble. :) The base was fantastic, I will try it as a base for cheesecake.

Most of it didn't get into the cake, I ate it off the beaters. DELICIOUS. Everyone loved it. I might try a little less sugar next time, though. Thank you!

To Die For Blueberry Muffins

Reviewed: Jul. 6, 2008
Delicious. I had no time, so made just the muffin, without the topping. Doubled the recipe, got 17 regular size muffins. Used frozen berries (and reduced heat to 325 F/160 C for about 35 minutes) - looks kinda funny, but tastes HEAVENLY.
