Cranberry Sauce

I made this tonight for thanksgiving dinner tomorrow. I will be lucky if I have any left for tomorrow! Every time I walk by the fridge I steal a spoonful. I was skeptical at first because I really like canned cranberry sauce, but I gave this recipe a try and WOW. I will never go back to canned. This is the perfect balance of sweet and tart. I cooked the cranberries longer than 10 minutes. I cooked them for about 20 minutes or until almost all the cranberries had popped.

Garlic-Lemon Double Stuffed Chicken

These are to die for. I used thinly sliced chicken breasts, smeared cream cheese on them like they were bagels and sprinkled shredded cheddar on the cream cheese. Then I rolled them up and secured them with toothpicks before dipping them in the breadcrumbs. I cut way back on the butter to about 4 tablespoons instead of 3/4 cup. I melted the butter in the microwave and stirred the minced garlic in. So good. I went back for second, which I don't usually do for meat!

Unbelievable Chicken

My chicken was about to expire and I had planned to use this recipe, but I forgot to marinate it. So, I pulled out all the ingredients, cut the chicken into strips, and sautéed it in the marinade ingredients. I didn't use the amounts specified in the recipe, I just kind of winged it. I also threw in a splash of soy sauce. It turned out SO GOOD. The "marinade" formed a delicious glaze over the chicken. I highly recommend trying it—the flavor had a lot of depth. (Sorry to all you die hard recipe purists who don't like reviewers who change the recipe. I read the reviews in order to find good changes for the original recipe!)

Juicy Roasted Chicken

Spooky Halloween Eyeballs

These are delicious and super cute, but they take FOREVER to make so I don't think I'll be making them a second time! I used a lot of red food coloring in the peanut butter mixture to make them red inside. (You know, more realistic.) I used upside down full sized chocolate chips instead of mini chocolate chips for the pupils. I thought they looked better. I also made blue and green eyes. When you apply the red for the veins use a tiny bit on a toothpick and lightly drag it through the white chocolate before it has hardened all the way. Don't over do it or it will look really cheesy!

Hearty Lentil Soup

This was delicious. I didn't have a parsnip or leak on hand. I substituted fresh parsley for cilantro because my husband hates cilantro. I also left out the wine and added an extra cup of vegetable broth like other reviewers suggested. I think this would be good any way you make it!

Hot Apple Cider

This is the most delicious drink I have ever had. My dinner guests raved about it. I didn't have cheese cloth or kitchen twine, so I put everything in a coffee filter and used the string from a tea bag to tie it shut. I made this in my crock pot, and I put the coffee filter in the cider and maple syrup mixture with the end of the string sticking out of the lid. That let me move the spice packet through the cider to disperse the flavors without opening the lid. It worked like a charm. I made 1 gallon of cider, and I had it in the crock pot on high for about 3.5 hours. For an extra kick, add some spiced rum to your cup of cider. YUM!

Caramel Snack Mix

This was pretty good. I felt like it needed another flavor in there though. Maybe cinnamon would be good? I might try it next time with cinnamon Life mixed in or something like that. I used a can of salted mixed nuts and it worked out well. You definitely have to stir it like crazy when it is cooling or it will harden into a big brittle blob. I put mine in a tupperware container straight out of the oven and shook it every few minutes until it was cool. Nothing stuck together! It's definitely not a peanut brittle, but a snack mix.

It's Chili by George!!

So good! I added an extra can of pinto beans in chili sauce and cut the chili powder back to 2 tablespoons. I also added some red pepper flakes and 1/4 cup of diced red bell pepper. My husband and I agree that this is our new favorite chili recipe.

Roasted Lemon Herb Chicken

I used boneless chicken breasts. I poured the oil and lemon juice mixture over the chicken and sprinkled the seasoning mixture on each side of the chicken. I baked at 350 for 20 minutes (my chicken breasts were very thinly sliced). SO GOOD!

Low-Fat Blueberry Bran Muffins

I usually don't like the taste of "low fat" foods but these are delicious! I think the fresh blueberries make this recipe. I couldn't find wheat bran in the store, so I used original All Bran cereal instead. Eat them warm with butter. Oh yum. I'm going to go eat another one now.

Chicken Egg Pie

I like all the ingredients, so I thought I would like this dish. Unfortunately when you mix everything together you get very unappetizing rubbery-with-chunks texture. The flavor was good though. I guess that's just the nature of quiche.

Easy Chicken Tetrazzini

I only gave this recipe 3 stars the way it is written, but 5 stars if you add seasonings. As it is it would be VERY bland! I sauteed the chicken in oil with minced garlic, paprika, red pepper flakes, thyme, rosemary, black pepper, oregano, and lemon pepper. Then I stirred the condensed soup, bouillon, butter and water in with the chicken and followed the recipe from there. So GOOD!
