Creamy Au Gratin Potatoes

I made this recipe as is and it was very good! My husband and I both really liked it. My 3 year old daughter, who does not like potatoes no matter what way they are prepared, ate these up! She loves cheese, so that should say something about the taste. I think I would use a little more cheese next time and maybe combine a couple, but as is, this recipe is great!

Chicken with Lemon-Caper Sauce

This was ok, but the Lemon Caper sauce was actually too much Lemon. The chicken had a good flavor and stayed moist. I served with Pasta expecting to be able to use the sauce on the pasta too, but it was too much. I will probably make this again though, but change the amount of Lemon juice.

Chili Rellenos Casserole

This was not good. I had to cook it a lot longer than what it said to because it didn't set. When it did finally set, it was not very firm like it looked in the pictures. I made this exactly like they said to in the recipe so I don't know why mine turned out so bad. The taste was ok, but the texture -- I made spanish rise from this site with this dish and mixed together which worked. Will not make this again.

Tilapia with Tomatoes, Black Olives and Corn

Did not like this at all. It smelled good, but lacked much taste. Will stick to baking the Tilapia. I like it that way sooooooooo much better!

Fish Chowder II

I don't know that I am the best reviewer for this type of dish as I am not a fan of fish, but I am still putting one here. This was ok. It definitely helped to disguise the fish flavor. It was really good with toasted garlic bread. It does not freeze well though, so don't try it. I didn't think it would, but the recipe made so much I didn't want to just throw it away.

Shredded Beef Enchiladas

This recipe was really good! I will definitely make again. The reason I gave it a 4 is because I couldn't give it a 4.5. It is really good, but, for my family's tastes would need to be modified. First, the sour cream sauce was too thick. I would thin it out next time but I am not sure with what, milk??? I'll have to check the other reviews and see if anyone else thought that too. I also thought the amounts were a little off. I only made 12 enchiladas with this and froze the rest of the beef in the juice for next time I want to make enchiladas. I made the same amount of cream sauce so I put some on the inside and some on top with a can of red enchilada sauce. I only used 1 to 1.5 Tablespoons of the sauce and meat mixture per shell and they were plenty full, almost too full. This was such a good recipe though. You really have to try it! It is a time consuming recipe, but most of that time is letting the beef simmer, so who cares! My husband and I loved it!

Slow Cooker Sweet Potato Casserole

I am giving this recipe 4 stars because half the people that ate it, loved it and the other half didn't. I think it needed more sugar and I am not a sweet loving person. But when it comes to sweet potato casserole, I do like it sweet. I would probably 1 and a half times the amount of sugar the next time.

World's Best Lasagna

I had to give this a 5 star rating because it really is the best lasagna I have ever had! It's even better than my mom's! The only thing was that it was too sweet for me, but that is all in taste. Plus, I used my own canned tomatoes, which, I found out afterwards, you should always use less sugar with them. My husband and 2 year old daughter just loved it. My husband was sad to see the leftovers gone. You have to try this!

Teriyaki Pork Tenderloin

This was very yummy! The pork was nice and moist and not too salty, which is rare! I do not think you need to double the marinade recipe as some people suggested, but then again, we didn't use the marinade for anything else. I made both 1 pound roasts, even though I knew we wouldn't eat all 2 pounds, but I used the second roast and cut it up into a pork stir fry 2 days later. Very versatile! It is so easy too! I bet this would be great on the grill also! I will try cooking it on there next time. This is definitely a keeper!

Chuck's Favorite Mac and Cheese

I made this recipe exactly as it says to and it was ok. My husband loved it. I thought that it had too much bread crumbs and not enough cheese, but I think it depends on your taste. My husband hates velveeta so I could never put that in it. I am going to make this again though. I am going to cut down the topping by at least half and I am going to add more cheese. I wasn´t real thrilled with the cottage cheese as it didn´t melt and it was weird to see chunks of white stuff in the mac and cheese. I am going to try processing it in the food processor first like someone else suggested. I also think I may melt the cheese mixture on the stove first. This is still a decent recipe though. It´s all in what you like!

Cabbage and Smoked Sausage Pasta

This was a very quick and easy meal. It tasted wonderful! One of the other reviewers said that you should only cook the cabbage for like 5 minutes. I ended up cooking my cabbage for probably 15 minutes and I like to still have some crunch to it, so it is all on your preference of how cooked you like your cabbage. My husband and I loved this and it reheated really well too! That is an important factor for me because my husband and I both usually pack lunches for the next day. Thanks for the great recipe!

Potato Salmon Patties

This was a wonderful recipe! I will definitely make this again, but I think I will try baking them as one other person did as I am trying to stay away from the fried stuff. My husband really liked them too. I did not like them reheated though, so I would suggest not making more than what you need!

Cream Cheese Chicken

This recipe was ok. I think it is a good base recipe though so I wasn't sure how to rate it. I think the cream cheese mixture needed something besides the mushrooms. I think that spinach, garlic and onions would be good. I believe I read that in some of the other reviews too. I did not use the nuts though, cause that seemed a little weird to me. It did take a lot of time to prepare though. I also had to cook twice as long as the recipe called for. I will make this again, with some modifications, but it would really only be once in a while since it is very time consuming. It would probably only be on the weekends too. I also think I would make a double batch next time and freeze it to see how that works. I love meals that I can freeze in individual containers and pull out in a crunch! Thanks for the recipe!

Salisbury Steak

This recipe was soooooooooooo good! I had never made Salisbury Steak before, except those frozen nasty things, so I was totally clueless on how this was going to taste. It was really good! I would definitely make more sauce next time though as this was not enough. I did accidentally put way too much powdered mustard in the sauce, but it was still excellent. I am sure it would be even better with the right amount. My 2 year old usually eats mostly veggies and pasta. She is not a meat eater and she hates potatoes of any kind. I still give them to her when I make them because I don't want a picky eater. Anyway, she ate a half of a serving of the steak and all of the potatoes with the gravy! She absolutely loved it and after every bite, she would say Ummm!!!! and rub her belly! You have to try this recipe!

Rich and Simple French Onion Soup

This soup was very good, but I think that the swiss cheese was too much. It took away from the fabulous flavor of the soup, which is why I only gave this a 4 star. Otherwise, this soup was awesome! I am so glad I can make this at home now!

Lemon Salmon Soup

Ok, let me preface this by saying I am not a big salmon fan, but that is why I chose this recipe. I was hoping that it would lessen the strong taste of salmon, which it did. The soup was good, but didn't have a lot of flavor. I think if you added veggies, like celery, carrots, and onions, this would be great! I also think you need more than just a pinch of the thyme, oregano and basil. I will definitely try this again but modify some. Definitely make with crunchy bread! It makes a world of difference. For those of you who aren't big salmon fans, try this, it's worth it!
