Chicken Parmigiana
This dish is my hubby's absolute favorite! I like to use thin-sliced chicken breasts and brown them (after coating in bread crumbs) in a few tablespoons of olive oil, over medium high heat, until they are nice and golden and crusty, about 2 minutes per side, before baking (another 8-10 minutes in a 400 degree oven). Delicious!

Barbecue Butter Beans
I brought these butter beans to a barbecue at my in-laws' and everyone LOVED them! "These are better than Bush's!" they said (and these people love their Bush's baked beans). The only thing I do differently is saute the onion in butter until it is soft and I bake them for just 1 hour. 1 1/2 hours is too long--the bacon will burn and the beans will dry out. Needless to say, I think these beans will be making a regular appearance at family barbecues from now on.

Sloppy Joe Sandwiches
I too am a former Manwich fan, but after tasting this recipe, I will never go back to the canned stuff again! It was delicious and even my ten month old could not get enough! The only thing I might do differently next time is brown the meat with some chopped onion and add a 1/2 tsp. or so white vinegar to balance out the sweetness. I'm making myself hungry for more just thinking about it! Delicious!
