Makeover Spinach Artichoke Spread

Excellent recipe! Freezes and reheats well. Tastes exactly like the original dish, with less fat and calories. Will make again and again, great to have on hand for surprise guests...just take out of the freezer and heat in the microwave.

Baked Tofu Bites

Terrible flavor; very salty and strong tasting. I will not be making these again. For all of the trouble, they are just a waste of time. Plain baked tofu squares with a coating of bottle barbecue sauce are better and easier to prepare.

Chocolate-Banana Tofu Pudding

Good for what it is...a dessert substitute. Taste is bitter; I decrease the cocoa by 1 tbsp and increase the sugar to 1/3 cup to make it more palatable. It does have a nice mousse consistency and is good with granola.

Perfect without modification; simple, healthy, and oohhhh so good! Very deserving of 5 stars. Great with crackers or on a sandwich. Recipe doubles very well.

Tofu Lasagna

Simply excellent! Great flavor, easy to make, yields large quantity, and freezes well. My only suggestion is to double the recipe in order to make 4 layers; as is, it only makes two layers which is thin for lasagna.

Breaded, Fried, Softly Spiced Tofu

Excellent recipe; quick and easy. I have made these several times now, they are a staple in my home. I strongly suggest doubling the spices; otherwise, the flavor is bland. Once I doubled them, these came out tasting like chicken strips. Everyone I serve them to loves them; and,they go well in dipping sauces!

Tofu Parmigiana

Very good recipe for beginners to experts; even those new to tofu. Omit the salt, the sauce adds enough sodium. These held their breading well when frying and can almost pass for being chicken. Meat eaters enjoy this recipe too!

Thai Curry Tofu

Very good basic recipe. You will need to add the vegetables suggested by others, and the rest of the can of coconut milk. Be careful adding red pepper flakes for some "heat," it seems they are augmented by the curry and the dish gets too spicy very quickly.

Soft Oatmeal Cookies

Great basic recipe and easily adapted by using Splenda, adding nuts, etc. to slightly alter flavor and/or make a more healthy cookie. Perfect consistency and bakes well, crispy on edges and soft in the center.

Easy Whole Wheat Peanut Butter Cookies

This recipe makes delicious cookies. I did place the batter in the freezer for about 30 minutes to make it firm enough to work with prior to baking. The reason I give it 4 stars insead of 5 is that in order to be considered healthy it should have used light butter and brown sugar substitute.

Butter Chickpea Curry

Can I give this 6 stars? The simplicity and outstanding flavor of this recipe make it one of my top 3 favorites. I will be making this routinely. If you enjoy Indian food, you MUST try this recipe. The only modification I made to the recipe was to use leeks instead of onions for a more mild flavor.

Fluffy Pancakes

Good recipe; however, the pancakes really weren't fluffy. I followed the recipe exactly with the exception of adding 1 tsp of vanilla as others had suggested. I will continue looking for another pancake recipe that yields fluffier pancakes.

Very easy to make, healthy, and quite tasty; I highly recommend this recipe. It is also flexible, I added some carrots and celery that I needed to get rid of and the recipe accomodated the changes well.

Honey Bun Cake I

I followed the recipe as provided and was very happy with the results. For those who enjoy sweet, cinnamon desserts...you will love this! It is quick, simple, and delicious. I plan to keep the recipe handy for those times I crave cinnamon rolls but don't have the time to make them.
