Gourmet Mushroom Risotto
This recipe is awesome! I love risotto, but was intimidated to try to make it until I read all the reviews saying how easy it was to make. I love this recipe. I did make some modifications.
I used about half of the recommended amount of mushrooms. Instead of shallots I used a regular white onion. My box of chicken broth only had 5 cups in it, so that's what I used. I used a Sauvignon Blanc from California as the dry wine. I also did some liberal sprinkling of garlic powder throughout the stirring.
My BF liked this dish a lot, and he doesn't even like risotto! Paired this with a rotisserie chicken.
