Addictive Sweet Potato Burritos
Changed it put a bit but the concept is awesome. 1 can of black beans, heated with 1 garlic clove, pinch of curry powder and ground cumin and lots of chili flakes. 3 big sweet potatoes boiled with a clove of garlic, salt, pepper, paprika and mashed. Made about 7 or 8 good sized burritos, enough for 3 or 4 people. To assemble: I put a layer of beans, a layer of potatoes and some cheese on top. Folded it and placed on a lightly oiled sheet pan. Baked at 350 for about 10 minutes. I served it with sour cream, cilantro and a homemade pineapple salsa! Yuuummyy.

Best Chocolate Chip Cookies
I made half a dozen. I didn't have any brown sugar so I mixed about 1/2 cup of regular sugar and 1 tablespoon of molasses and mixed really well. They didnt flatten like I thought they would, but that always happens when I make cookies. They were round, but still delicious! I also added some dried cherries and some pine nuts and less chocolate chips. Yummmmm!!!
