Florida Key Lime Pie

I made this recipe to satisfy one of my pregnancy cravings. It more then did the job!!! It was easy to make and very delicious. I followed another reviewers suggestion and decreased the lime juice to 1/4 cup to make it less tart. My whole family enjoyed this recipe.

Cabbage Roll Casserole

This recipe satisfied my taste for cabbage rolls perfectly! I used pasta sauce and added a few other spices to pep-up the flavor. I also halved the recipe and that filled a regular-sized lasagna tray just fine.

Spinach Mushroom Quiche

This recipe was a big hit a brunch I hosted. I used a frozen pie crust instead of the crescent rolls, and have tried it several times with different varieties of mushrooms. Each and everytime the quiche is delicious!

Chicken Marsala

I love chicken marsala and was eager to try this recipe. Although it was very good -- it didn't quite match up to my expectations. I was looking for a more intense sauce with a feel of creaminess to it. The 2nd time I made it, I let the sauce reduce much longer and added cream. That helped alot. However, the search continues.....

Grilled Stuffed Red Snapper

I used a whole snapper split open instead of filets and changed the stuffing recipe because my husband does not eat shell fish. I replaced the shell fish w/ Baked Blue Snapper. You can use any other type of light fish you prefer in this recipe. The end result was delicious!!!

Mexican Baked Fish

I made this recipe for my husband who loves fish, but is very picky. He loved it and requests it frequently now. I even tried the dish with tilapia fish -- and it was still delicious. Very simple to prepare!!!
