About this Cook
I am a mother of four young children, I have a great husband and I am a stay at home mom. I do my best to prepare three meals a day (I admit, sometimes it is cereal for breakfast), so I like to look at this website alot!
My favorite things to cook
We love Mexican food! My husband says Italian runs right up there with Mexican for him, and I like it too, so those are our primary meals.
My favorite family cooking traditions
I'm trying hard to follow in the footsteps of my mom and grandmother, making cutout cookies for the kids (I am perfectly happy with cookies that don't require cutting), but cutouts are so much more fun for them, so there you go. I really do like donning my apron though, and digging my hands into bread dough and such. It is very relaxing on a stressful day to work that stress out in a loaf of bread. And good results, too!
My cooking triumphs
It has to be the bread. I really never thought I would ever bake as well as my grandmother, but I surprised myself! It doesn't have her special touch, but it's good.
My cooking tragedies
When I first got married I was such a terrible cook!!! My poor husband did his best to endure burnt and charred food, but we often threw it away and made another trip to McDonalds... I'm so glad those days are behind us! I did keep on trying, though, and with much practice my cooking became much, much better.

Caramel Popcorn Balls
I tried these today to give away for Christmas. I used 1 and 1/2 cups unpopped corn and made it in our airpopper. It made lots of popcorn balls, so there was plenty for giving and eating! My four children absolutely loved them, and they were very easy to make...I was quite surprised with the simplicity. It is raining today, and that seemed to have no effect on this delicious treat. I did cook it to soft ball stage.

Truck-Stop Buttermilk Pancakes
OHH YEAH! These were by far the best pancakes I have ever made in my life!!! I could not ask for a better recipe and I hope I never lose this one. I used my electric griddle and it worked great. Just be careful to lightly brown on each side. Overbrowning will cause your pancakes to be harder. Thank you for the recipe!!! And I agree with the other person that said these top IHOP's. I think if IHOP went with this recipe, my budget would be in some serious trouble!! I love these and will use only this recipe from now on.

Baking Powder Biscuits
these were really good. The dough was really soft and I couldn't roll it, (probably my mistake), so I spooned it onto my pan and the biscuits were soooo soft and flaky...so light...the best I have ever made! I greased my pan with butter before adding the dough.
