Dawn's Candied Walnuts

Reviewed: jun. 23, 2009
These are very good! They have a nice sweet cinnamon flavor! They took a lot longer than 10 minutes to roast but everything else was perfect! I'll be serving these to my guests on Father's Day...if I can stop eating them!

Pepper Jelly Appetizer

Reviewed: jun. 11, 2009
This was very good! I love the combination of flavors...hot and spicy with salty and sweet! And I love the creamy and crunchy textures also! I used a cranberry hot pepper jelly. The only thing I would do different next time is to use equal amounts of cream cheese and jelly. And I would probably warm this up in the microwave before serving. I will definitely be making this for my next party!

Extreme Chocolate Cake

Reviewed: may 12, 2009
This is a very good chocolate cake recipe! I added 1 cup of mashed bananas and I reduced the boiling water to 1/2 cup. I baked it in a 9x13" baking dish and added a crumb topping! I served this on Mother's Day and everyone loved it! It was moist and rich but not too sweet! Perfect! This will be my "go to" recipe for chocolate cakes!

Daddy Charles's Spooley

Reviewed: may 8, 2009
This is very good! It tastes like a really good sangria! I made this by the glass using 2oz. Rum, 2oz. dry red wine, 4oz. red fruit punch, 3 oz. club soda, 1/2 tsp. fresh lime juice, 1/2 tsp fresh lemon juice...and I served it in a wine glass instead of a "red plastic cup"! After drinking a couple of these you will feel "loopey"...as we call it! It really does sneak up on you, so be careful!

Almond, Apple Cinnamon Scones

Reviewed: may 4, 2009
I was worried that these might be dry, so I used almost a full cup of yogurt and doubled the milk. I also added 1 tsp. of cinnamon powder to the dry ingredients. I used only 1 tsp. of almond extract. Because I added more wet ingredients, the batter was very sticky, so I dropped the batter onto the cookie sheet in 12 equal portions and topped it with cinnamon sugar and chopped walnuts (didn't have any almonds). They were perfect! Light, moist and flavorful! Just what I wanted! Great recipe!

Hot Cross Buns

Reviewed: apr. 14, 2009
This was very good! They are nice and fluffy! They browned up perfectly! The only thing I would change next time is that I would add a little more sugar and cinnamon...but that's just a personal preference. To make them a little sweeter and more cinnamony, I glazed them with a sweet cinnamon glaze. This was the perfect fix. I omitted the raisins because I'm not a big fan of them in rolls. Next time I'll add the orange flavored icing on top. This is a great recipe!

Strawberry Muffins

Reviewed: feb. 4, 2009
This is a very good and very easy muffin recipe! I did as so many members suggested...I added 1/4 cup brown sugar and 1 tsp. pure vanilla extract. I used frozen strawberries that I chopped and thawed. These muffins had just the right amount of sweetness. This recipe made 13 muffins not 8. I will be making these often!

Excellent and Healthy Cornbread

Reviewed: jan. 16, 2009
This was pretty good. I made it exactly as written! The yogurt gave it a sour dough flavor. It was perfect with "The Best Ham and Bean Soup" recipe, also from this site. I was looking for a cornbread recipe with simple ingredients that I had on hand. I also wanted it to be dense enough for dipping and this worked out fine! It wasn't too sweet which was what I also wanted.

The Best Bean and Ham Soup

Reviewed: jan. 16, 2009
Amazingly Good! 10 Stars! I made half of this recipe. I made it as written except I didn't have veggie juice so I increased the veggie broth and the diced tomatoes. This soup doesn't need over 8 hours to cook! It was perfect after 4 hours! I served this with the "Excellent and Healthy Cornbread" recipe from this site. I will use this soup recipe from now on!

Jenn's Out Of This World Spaghetti and Meatballs

Reviewed: jan. 15, 2009
This was very good! I'm reviewing this recipe only for the meatballs. I used a different recipe for the sauce. I made it as written except I baked mine at 400* for 20 minutes. Then I added them to the sauce. I was very skeptical about using so much parsley and oregano, but they complimented each other very nicely. This recipe is even better than the meatballs from the famous Rao's Restaurant in Harlem, N.Y... I think I'll use this recipe from now on! And that's tough for an old-fashioned Italian girl to admit!!!

Easy Mini Quiche

Reviewed: jan. 14, 2009
This was pretty good. I made some changes so that it wouldn't be bland. I added salt to the egg mixture and I quadrupled the cheese. I also added chopped hard salami and I topped it with chopped green onions. This made it very tasty! I also liked Cindylou's idea of using a knife to loosen the quiches from the pan and then using a spoon to help remove them. I didn't have a problem with sogginess. Maybe it was because after grating the onions, I squeezed out the excess liquid. I also increased the cooking time about 10 minutes.

Quick and Easy Grilled Potatoes

Reviewed: jan. 12, 2009
This was very good! I was looking for something different from the same old same old, and this fit the bill! I made it as written except I added seasoned salt. This was very easy and much quicker than baking them in the oven! I will surely be making this again!

Banana Rum Biscotti

I couldn't stop eating these when they came out of the oven! I like really soft biscotti, so I didn't bake them twice...I don't think I could of waited that long anyway! These are so good warm! Thanks Sueb for the recipe!

Homemade Mac and Cheese

Reviewed: jan. 12, 2009
I think the reason so many members thought this was bland was because it has way too much milk! I agree with the member named Sweetjam...this is enough cheese sauce for a pound of pasta! I also agree to add salt and pepper. I had a problem with clumping and I don't know why! I omitted the breadcrumbs and baking step. I added chopped green onions on top for more flavor. I think if I try this again, I would use 1/2 the milk and make it hot before adding it to the cheese mixture.

Hawaiian Chicken I

Reviewed: jan. 3, 2009
I made this as written except I used the dipping sauce as the marinade and added 3 cloves of minced garlic, 1/4 cup of honey and pineapple chunks, then baked it at 375* for 20 minutes, instead of grilling. I poured everything over white rice before serving. This was pretty good!

Cream Cheese Penguins

Reviewed: jan. 3, 2009
These are so cute! My family loved them! Its a lot of prep and detail work, but its worth it! I highly recommend using a pastry bag because when I used a sandwich bag, the bag got a blow out! I made scarfs out of jarred roasted red peppers cut into very thin strips. I also flavored the cream cheese with dry ranch dressing as suggested by others. These are so cute that you hate to eat them! They do taste good though! Tastes just like penguin!

Roasted Spicy Garbanzo Beans

Reviewed: dec. 31, 2008
This is 5 stars if you let the beans bake til hard and crunchy! This will take over an hour. Check them every 20 minutes and shake the tray to let them dry evenly. I seasoned mine to suit my own taste. I coated the beans with the olive oil then sprinkled them with seasoned salt, garlic powder, onion powder, a pinch of cayenne pepper and about 1/2 tsp. of smoked paprika. With these seasonings and baking them til they were hard and crunchy, made this taste like you were eating crispy fried chicken skin! So good!

Pecan Turtle Bars

Reviewed: dec. 31, 2008
This was very good! I used 2 cups of flour as suggested by other members but I think it would of been better as written because this made the mixture a little dry. I crushed the pecans because it didn't seem to be enough to cover the entire pan if they were left whole. I would consider this to be a candy because of how sweet and rich the bars are.

I can't believe I had to make a change to this one...its only 2 ingredients!!! Lol! But here goes... I made this with 2 parts sugar to 1 part water. I'm using this to make Limoncello Martini's and thats what the martini recipe said to do! Turned out great! Tastes just like sweet water!;)

Calamari

Reviewed: dec. 27, 2008
I always use the following ingredients to season the batter so that blandness is never a problem...2 cloves crushed garlic, 1 cup flour seasoned with 1/2 tsp. salt, 1/4 tsp. pepper, 1 tsp. baking powder and a pinch of cayenne pepper. Add enough water to this mixture to make a slightly thick batter. Mix thoroughly. Dip the calamari rings into this batter then coat with plain (unseasoned) breadcrumbs. Then deep fry (in small batches) for 1-2 minutes at about 375*F. Serve with marinara sauce.
