Cranberry Orange Relish with Orange Flavored Liqueur

I've made this many times for Thanksgiving and everyone loves it! In my opinion, its much better than cranberry jelly! Very easy and it has a very refreshing flavor! I use 1- 12oz. bag of fresh cranberries, about 3/4 cup of white sugar and 1 large navel orange. I didn't use the orange liqueur and it was still delicious! This makes about 2 1/2 cups of relish!

MVP of any party dip

I kept forgetting to make this but I finally remembered last night!!! This was extremely good!!! I only used 6oz. of the hot sauce because I'm whimpy when it comes to spicy foods...but it was still too spicy for me! I ended up adding 3 Tbls. of honey to help tone down the heat...then it was perfect! I used ranch dressing instead of blue cheese (just a personal preference)...this was gobbled up real quick! I served it with tortilla chips and celery sticks and it was delicious with both! I will make this again for the Super Bowl!

Veggie Enchiladas

This was VERY good!!! The only changes I made was to add salt and pepper while sauteing the zucchini and I also added an extra clove of garlic because I just LOVE garlic! I used 2 small zucchinis, 1 large can of black beans, 1 large can of green sauce and 16 oz. of cheddar cheese. This made 14, taco sized, enchiladas. I agree with you...I think the green enchilada sauce is much better than the red! The green sauce complimented the flavor of the vegetables perfectly! This is a must try recipe!

Mushroom and Sweet Pepper Sandwich

Wow! This is a tasty little sandwich!!! I made it exactly as written except I used wheat bread instead of rye. I made the dressing out of honey dijon mustard and mayo. I've never tried that before but I really liked it! It went perfectly with this sandwich! 10 Stars!

Chicken Tortellini with a Mushroom Spinach Sauce

This was very good! Instead of cooking everything together, I sauteed the onions, garlic, mushrooms and seasonings in a bit of olive oil first. Then I added the spinach and let it wilt down before adding the tomatoes. To thicken the sauce and make it a little creamy, I added about 1/2 cup of ricotta. This worked perfectly and I highly recommend it! I've never used mushrooms and spinach in my tomato sauce, but I really liked it! Thanks for turning me on to a new way of making sauce! Great recipe! The photo was taken without the ricotta.

Easy Shrimp in Creamy Basil Sauce

This was perfect! The only change I made was to use chicken instead of shrimp because my 18 year old won't eat shrimp! And I used fat free half n' half. There was plenty of cream sauce and I only used 1 1/2 cups of the half n' half. The flavor of the garlic, fresh tomtatoes and basil really comes through. I served it with grated parmesan cheese. This is a recipe I'll use often!

Cheeseburger Pockets-ci Recipe

This was so very good! The only changes I made was to use chopped up dill pickles instead of dill pickle relish (I couldn't find this) and I used real onions instead of dried. I also toasted the sesame seeds. Also, I doubled the recipe and it was just enough for 8 burgers. Will definitely be making this very often!

Best Ever Meatloaf with Brown Gravy

I used this recipe for the gravy only. This was a very good and very easy brown gravy recipe! I made it as written except I didn't have any mushrooms, but it was still very tasty! I would of liked it to be a little thicker, so next time I'll add less liquid. This will be my gravy recipe from now on!

These are very good! They have a nice sweet cinnamon flavor! They took a lot longer than 10 minutes to roast but everything else was perfect! I'll be serving these to my guests on Father's Day...if I can stop eating them!

Pepper Jelly Appetizer

This was very good! I love the combination of flavors...hot and spicy with salty and sweet! And I love the creamy and crunchy textures also! I used a cranberry hot pepper jelly. The only thing I would do different next time is to use equal amounts of cream cheese and jelly. And I would probably warm this up in the microwave before serving. I will definitely be making this for my next party!

Extreme Chocolate Cake

This is a very good chocolate cake recipe! I added 1 cup of mashed bananas and I reduced the boiling water to 1/2 cup. I baked it in a 9x13" baking dish and added a crumb topping! I served this on Mother's Day and everyone loved it! It was moist and rich but not too sweet! Perfect! This will be my "go to" recipe for chocolate cakes!

This is very good! It tastes like a really good sangria! I made this by the glass using 2oz. Rum, 2oz. dry red wine, 4oz. red fruit punch, 3 oz. club soda, 1/2 tsp. fresh lime juice, 1/2 tsp fresh lemon juice...and I served it in a wine glass instead of a "red plastic cup"! After drinking a couple of these you will feel "loopey"...as we call it! It really does sneak up on you, so be careful!

Almond, Apple Cinnamon Scones

I was worried that these might be dry, so I used almost a full cup of yogurt and doubled the milk. I also added 1 tsp. of cinnamon powder to the dry ingredients. I used only 1 tsp. of almond extract. Because I added more wet ingredients, the batter was very sticky, so I dropped the batter onto the cookie sheet in 12 equal portions and topped it with cinnamon sugar and chopped walnuts (didn't have any almonds).They were perfect! Light, moist and flavorful! Just what I wanted! Great recipe!

Hot Cross Buns

This was very good! They are nice and fluffy! They browned up perfectly! The only thing I would change next time is that I would add a little more sugar and cinnamon...but that's just a personal preference. To make them a little sweeter and more cinnamony, I glazed them with a sweet cinnamon glaze. This was the perfect fix. I omitted the raisins because I'm not a big fan of them in rolls. Next time I'll add the orange flavored icing on top. This is a great recipe!

Strawberry Muffins

This is a very good and very easy muffin recipe! I did as so many members suggested...I added 1/4 cup brown sugar and 1 tsp. pure vanilla extract. I used frozen strawberries that I chopped and thawed. These muffins had just the right amount of sweetness. This recipe made 13 muffins not 8. I will be making these often!

Excellent and Healthy Cornbread

This was pretty good. I made it exactly as written! The yogurt gave it a sour dough flavor. It was perfect with "The Best Ham and Bean Soup" recipe, also from this site. I was looking for a cornbread recipe with simple ingredients that I had on hand. I also wanted it to be dense enough for dipping and this worked out fine! It wasn't too sweet which was what I also wanted.

The Best Bean and Ham Soup

Amazingly Good! 10 Stars! I made half of this recipe. I made it as written except I didn't have veggie juice so I increased the veggie broth and the diced tomatoes. This soup doesn't need over 8 hours to cook! It was perfect after 4 hours! I served this with the "Excellent and Healthy Cornbread" recipe from this site. I will use this soup recipe from now on!
