Chocolate Zucchini Bread II

Yum Yum! I doubled the recipe. Use buttermilk if you have it. I forgot the nuts but it was really good without. It was perfectly chocolate and moist. I used about 6 zucchini and squeezed the liquid out of only about half. I wasn't sure if I needed to or not but I don't think it is necessary. Even my dad liked it, although I didn't tell him it had zucchini in it. Don;t over do it on the cinnamon...exact amount or less. It can get a strong taste if you are not a big fan but mine was delicious!

Lemon Poppy Seed Bread

Doubled the recipe, used the juice on 2 lemons and a splash of lemon extract. Used a little extra poppy seeds. My husband loved it. It is his favorite. The lemon flavor was just right according to him. Use buttermilk if you can. Super moist.

Best Ever Banana Bread

I loved this recipe. I doubled the recipe and added about 3 times the amount of nuts and a few extra bananas. One of the other reviews suggested a topping of crushed nuts, nutmeg, sugar and cinnamon. I suggest going for it... Although I used half brown sugar and light on the nutmeg. Super good, super moist! I gifted most of the bread but I used a large cast iron skillet to make some for myself. My dad was visiting and ate almost half the pan. it was so yummy!!!

Peanut Butter Choco Chip Cookies

Wonderful cookies! Chewy, crunchy and delicious! The first time I made these I ran out of crunchy peanut butter and used 1/2 crunchy almond butter. I also added a splash of vanilla. I am making them tonight for Santa!

Fluffy Biscuits

These were great. I didn't roll them out, instead I made them like drop biscuits. I also added a handful of shredded cheese and about a teaspoon of garlic powder. I also made these with gluten free self rising flour and just cut the baking powder down to a teaspoon. I was afraid it would turn out another failed biscuit experiment but it was really good. Couldn't tell it was any different than regular flour once baked...although before it was cooked did look just like really think mashed potatoes. Perfect with beef stew,

Grilled Ham Steak

My husband loved this recipe! He likes sweets and I don't and it was perfect for us both. The sauce was even good on the mashed potatoes that I made...sounds a little weird but trust me it was great. I did change the recipe a little: instead of cinnamon I added about 3 good splashes of worchtishire sauce, and I used about half the amount of regular yellow mustard and the other half a course ground honey dijon mustard. I just had these things on hand but I will totally make this again. I would probably double or triple the recipe for a larger steak but ours was only about a half inch or less thick. Also I did not feel like heating up the grill so I put it in a backing dish with the sauce on both sides and broiled it for about 4 or 5 minutes until the top started to bobble and darken in spots then I turned it to 400 for another 5 minutes. Perfect and no need to marinade unless you just want to. Quick and delicious meal! Thanks!

Truck-Stop Buttermilk Pancakes

This truly is the best pancake recipe I have ever tried. The cakes were so light and fluffy. I did separate the whites and beat them before adding them to the batter, which I feel made them a little lighter and just perfect. I changed the quantity to 4 and my husband and I will have enough left over for tomorrow. I plan to add blueberries to the remaining batter. This is my pancake recipe from now on!
