Layered Peppermint Bark

Excellent recipe. I only gave it 4 starts since I modified it after reading another review. I omitted the cream. I used crushed candy canes (4) and folded them into the white chocolate. I didn't have any peppermint extract so I just drizzled plain melted dark chocolate over the white choc/candy cane mixture and then cut thru it with a knife - so it looked swirly & pretty. Then I topped it with the remaining crushed candy cane. Chilled it, then flipped it on the counter and cut it when it was room temp. It looks beautiful and is a hit on the holiday baking tray!

Cranberry Pumpkin Muffins

Very yummy! I added 1/4 cup of maple syrup and only 1 cup sugar. I used fresh cranberries (I think I'll use more than the 1 cup next time) and pumpkin seeds. I might have overdone it on the spices (cin, nutmeg, allspice, cloves) but they still turned out wonderful!

Homemade Peanut Butter Cups

So yummy! A friend had given me the vegan version of this recipe - which was still good, but not as good as this....amazing how adding a little butter improved the flavor and the crumbs gave it that perfect texture! I didn't melt the peanut butter mixture on the stove. It was at room temp and blended nicely, and it didn't seem to make a dif to the overall flavour or texture. Also, I added 1tbsp peanut butter to the chocolate. I just used the back of the spoon to spread the chocolate around. I stored mine in the fridge (but they didn't last long) and let people peel off their own wrappers as they ate them.

Marbled Almond Roca

absolutely amazing!! I was surprised to see only one recipe for almond roca - but after making this I can say that this is the only recipe you'll need! I followed the recipe exactly (added whole almonds instead and just chopped them chunky)except I omitted the vanilla chips. I took one reviewers advice about the hard-crack candy stage since I don't have a candy thermometer. I snuck a taste while it was still warm and was disappointed that it was chewy. But after it cooled completely in the fridge it was perfect!! I'll for sure be adding this to my christmas baking list!

Date Flecked Orange Muffins

Really yummy! I added a cup of fresh cranberries and they turned out amazing! The second time I made them I added a tbsp of pumpkin puree along with the cranberries and again they tasted great (although the pumpkin & the orange turned them slightly green!) A really great recipe that I'll be making again!

Plum Pudding

Very delicious and I will for sure be making this again! I used fresh plums that my neighbour picked for me (the little ones)Yummy! Since they were smallish I ended up using ~20. I cut the sugar down to 2/3 cup and it was plenty. I didn't have instant tapioca so I used what I had on hand - the pearl slow-cooking tapioca. Not a good idea as it didn't really cook through. I normally love tapioca and its a nice concept but I think next time I will omit that. I made a baking mix I found on this site (2 1/4 cup flour, 1 tbsp. baking powder, 3/4 tsp salt, 1/2 cup shortening. Mix dry indgredients, cut in shortening til crumbly.) Turned out wonderfully - except for the slightly chewy tapioca which was my fault!

Broiled Tilapia Parmesan

Simply amazing! It was so quick and easy to make - I am so excited about how delicious this is that I went out and bought some more tilapia the next day!! I will for sure be making this often!!

Creamy Mushroom Risotto

Very yummy - one of the better risotto dished I've had! I did make a few changes. I added steamed butternut squash, fresh mushrooms (instead of dried), zucchini and red bell pepper. So it looked pretty & colorful. I also used only 1/2 the amount of chicken stock (and topped it up with the excess squash water) as I had read that other complaints that it was too salty. I topped it off with some fresh parmesan...and it was perfect! I've made risotto before so I know that it's a commitment. But all-in-all it's a very simple dish and I'll for sure be making this one again!

Dishpan Cookies II

Very yummy! And chewy! I followed the recipe exactly except I added vanilla and didn't have quite enough choc chips - but they still turned out wonderful! I especially like how they flatten (I'm a fan of soft flat cookies) I'll be making these again!

Banana Pancakes with Berries

Very YUMMY! I was out of milk and didn't have any buttermilk - so I used plain yogurt (and watered it down to a buttermilk consistency) They were so fluffy and I loved how the bananas are fried on one side. DELICIOUS!
