Roasted Beets and Sauteed Beet Greens
I didn't want to run my oven for an hour for 3 beets so I wrapped in moist paper towels and microwaved 10 min (turning at 5). They still turned out great but we love oven roasted veggies so I'll definity try again when I have more veggies to roast.

Persian Yogurt Salad
Delicious, cool and easy to make. I added more cucumbers and less yogurt but kept the seasonings the same and the dish was a hit.

Garbanzo Stir-Fry
This was a huge hit. I have a three year old who, after one bite, started searching her plate for the garbanzo beans and then asked to be fed the leftovers the next day!
