I am an American living in Ireland. I'm learning all sorts of things about how to cook potatoes. Living here, I have more time to cook, and eating out is terribly expensive here. So I am spending more time making healthy foods, foods my kids will eat, and great soups.
My favorite things to cook
I like to bake cookies, muffins and quick breads. I also like to use lots of spices. My spice cabinet is growing and growing!
My favorite family cooking traditions
I love to make Nestle toll-house chocolate chip cookies-the original recipe. A family tradition for over 30 years! We have the chocolate chips shipped over from the States because we can't get Nestle here.
My cooking triumphs
Learning how to make Indian food. I made 4-5 different dishes for a friend who had spent time in India, and he told me that it tasted just like this one restaurant he had been to when he was there. Yahoo!
My cooking tragedies
Spending 15 years thinking that eating out was better than eating in. I now know that I have the ability to cook good meals, for way less money than a comparable meal at a restaurant!

Apple Streusel Muffins
Easy to make, excellent taste. My 7-year old daughter loves to help make them, and we all love to eat them!

Shrimp Fettucine Alfredo
LOVE this recipe. Used full cream instead of half and half by accident and WOW it was amazing! But for the health-conscious that's not the best idea. Excellent recipe!!
