I'm a registered nurse working in surgery. I really enjoy cooking for my friends, family and co-workers. I'd love to own a bakery/coffee shop......maybe if I win the lottery.
My favorite things to cook
Nothing gourmet, just good old fashion southern cooking, except I rarely fry food. I'm sure Paula Deen would say "how can you be a southern cook and not fry?" It's just too messy! My specialties are cheesecake, cookies, casseroles, meatloaf, party foods

Thanksgiving is my favorite meal to cook.
My cooking triumphs
I think I make a pretty mean cheesecake. I experiment with many different flavors and they almost always turn out great.
My cooking tragedies
In my very early days of cooking (I was 19), I was making beef stroganoff for a new boyfriend and the recipe called for a minced clove of garlic. I had never used fresh garlic before and I used a whole BULB instead of a clove. When he got to my apartment my eyes were burning like crazy and we had to toss it out and go out for pizza.

Pancakes
I noticed this recipe was rated either very good or very bad, so I had to try it. It seemed a little thin, so I added a little extra flour (maybe less than 1/4 cup)and 2 tsp. vanilla. I don't see any reason to add sugar if you plan to eat them smothered in syrup! Those who rated it badly, may have used all purpose flour. Pancake batter, like brownies, should be left slightly lumpy. I poured them onto a non-stick griddle which I greased lightly with a paper towel dipped in vegetable oil. Turn after the edges look dry and the bubbles on top begin to pop. They will rise beautifully after you turn them. And they tasted great!

Pineapple Cheese Ball
I have a very similar recipe that always gets rave reviews. With mine, you leave out the celery, use red instead of green bell pepper, and 2 or 3 chopped green onions instead of minced onion plus a tsp. or so of season salt. One way to make it thicker is to grind an additional cup of pecans (I use my blender) and stir that into the cheese ball before shaping.
