Blueberry Zucchini Bread
Loved IT!!! Changes: 1/2 applesauce 1/2 Oil (in place of 1 Cup Oil) 1C whole wheat flour replacing 1C AP flour Added more walnuts Baked 2 loaf pans @ 350 for 1hr 15min - - - Perfect! My picky girls (teenagers) and No veggie eating hubby loved it!!!! They would not let me take the 2nd loaf to work - they hid it in fridge!

One Bowl Chocolate Cake III
I signed up to bring in a baked item for a work dessert contest. I made this cake with 1 cup cocoa. Layered cakes with raspberry preserves in btwn the layers & made sure preserves oozed from btwn layers, iced (top only) with milk choc. (store)icing, put stripes of raspberry preserves (heated up in the jar first) on top and swirled it in icing; then sprinkled with mini choc. chips. I won third place - YUM!

Zucchini-Chocolate Chip Muffins
My picky teens love these for grab and go. I try to have these frozen on hand in a ziplock bag. A fairly healthy alternative to junk food. A few changes to make healthier: I used 1/2 brown sugar and 1/2 granulated. 1/2 applesauce and 1/2 canola oil. I increased the nuts for more MUFA. Next I will try 1/2 whole wheat flour.
