Tortellini Minestrone
I followed her directions exactly. The base recipe is only okay at best. The flavor is super sweet and bland. Under no circumstance is this Minestrone, but with some doctoring, it makes a pretty decent soup. Unless you want an overly sweet soup, I wouldn't advise adding that much ketchup. I was shocked she wanted ketchup to begin with, and after tasting, I'm not a believer. Also you might want to cut down on the veggies, and add some red beans. I'll stick to my gut next time and make a legit minestrone, and add tortellini.

Pasta With Tuna Sauce
This was very good! I don't tend to keep much canned stuff, so I used fresh roma tomatoes, and I used pouched tuna, which I believe has a slightly stronger flavor. My family really liked it! Also good old for a small lunch the next day.

Ten Minute Enchilada Sauce
Very yummy, better than canned for sure! I used New Mexico chili, but I think I will try California chili next just to taste the difference. It's not quite like the Enchilada sauce at my local joint, but it's close enough!!
