Easy Slow Cooker French Dip

"Easy and tasty," so says my husband. We followed the recipe, except we had a little garlic and Worcestershire. We also only used a 2lb. roast, since it's just us and our two year old son. I'll looking forward to the leftovers once the meat has soaked some more in the juices.

Grandma's Applesauce Meatballs

These meatballs are a great way to make dinner for tonight and dinner for the freezer. The recipe is easily divisible by 3. The applesauce makes for moist flavorful meatballs. Enjoy!

Roasted Garlic Lemon Broccoli

A little salty for my taste. I will cut the salt in half next time, but otherwise very yummy! I also left out the lemon juice which was easy to do. Thanks for a great new way to fix broccoli!

Ginger Glazed Mahi Mahi

Quite good! This is a great marinade that flavors the fish in a short amount of time. I'm impressed that I was able to arrive home from the grocery store with a kind of fish I'd never cooked before and within an hour I had dinner on the table. This recipe is easily done with ingredients that I had on hand. The only thing I did differently was use dried ginger and cook the fish on the grill. It was great!

Bacon Wrapped Water Chestnuts III

Yummy! These were a hit for my book club this evening. I only give it four stars instead of five because I cut the sauce in half and had to cook a little longer to get the bacon well done. This is a great appetizer and a recipe I will be using for years to come.

Red Velvet Cake I

Yummy! I made the changes suggested by others (3 T. cocoa, 2 c. sugar, 1 c. oil) and it turned out quite well. My only problem was the cakes sticking to the pans. Maybe I didn't grease the pans well enough. Oh, still turned out great. Very moist and excellent chocolate flavor. My only other complaint was how difficult it was to find 2 ounces of red food coloring. I had to go to 4 different stores before I found someplace that didn't just sell packages of all the colors.

Well, if we had followed the recipe exactly maybe it would have been better. It was way too sweet for our taste. We used orange juice instead of water, as suggested by many people. If you are a wine drinker, especially a dry red wine drinker, don't use orange juice. It makes it too sweet! I will still be looking for another good mulled wine recipe. The search continues...

Almond-Topped Fish

This turned out pretty well, but I can't justify giving it 4/5 stars since my husband made several modifications to the original recipe. The modifications that others suggested were using sour cream, instead of mayo and adding garlic. However, he mistakenly used cilantro from our herb garden instead of parsley. It definitely had a different flavor, but it was still pretty good. We had no problem eating almost a full 1lb. cod fillet with our son. We will probably try this recipe again sometime.

Slow-Cooker Chicken Tortilla Soup

As our 1.5 year-old son said, "YUMMY!" This recipe was easy to make, especially following the advice of other reviewers to put the frozen chicken breasts in at the beginning and shred them later. We changed very little of this recipe and the flavor was exceptional. Our only notable variation was a 15oz can of enchilada sauce since we couldn't find a 10oz can at the store. We highly recommend this soup, topped with sour cream and cheese for optimal flavor.

Vegetable Beef Soup

With a few additions/changes this was a fabulous Vegetable Beef Soup recipe to start with. I didn't have mushrooms on hand so I left those out, but I'm sure they would have been yummy in the soup. Instead I added a can of stewed tomatoes. Also, because I like rice in my soup I added two boxes of rice-a-roni, only one package of the flavoring though. I used garden vegetable rice-a-roni. Adding the rice definitely makes the soup a lot thicker, so it's best to add another 3-4 cups of broth depending on how thick you want the soup. Oh, I should also mention that I did this in a crock pot instead of on the stove. The only reason I'm giving this recipe 4 stars instead of 5 is because of all the changes I made. Doing it in the crock pot made for an easy dinner when I got home from work and I served it with fresh, hot, crusty french bread from my bread machine. This was a great way to use up leftover pot roast and now I'm looking forward to today's lunch leftovers!

Hearty Split Pea Soup

This is fabulous thick split pea soup. Definitely add the milk at the end. I took others suggestions and used chicken broth instead of the water. Serve with some crusty bread...mmmmmmmmmm. I will definitely be making this one again.

Citrus Turkey Roast

The gravy for this recipe is awesome! I actually used a turkey hindquarters, since we like dark meat better and it is what I had on hand. The meat was tender and tasty. We will definitely be trying this one again.

Banana Pancakes I

These pancakes are awesome! We make them a couple of times a month. We've made them following the recipe, but we prefer them with a few changes. We use whole wheat flour for a heartier pancake and since my son can not have egg whites right now we make them with just the yolks and they still turn out great! They are fabulous with regular syrup, but we also like them with honeybutter or huckleberry syrup. Mmmm...

BBQ Pork for Sandwiches

WOW! This was easy and yummy! I used a pork shoulder roast, but otherwise followed the recipe and it turned out beautifully. It was easy to remove the extra fat while I was pulling it so I think it turned out to be pretty lean. I used Sweet Baby Ray's BBQ sauce.

Easy Key Lime Pie I

Mmm... good! This was incredibly easy and oh so tasty! I was too lazy to squeeze 30 key limes as another review had done, so I tried the suggestion of 1/2 cup lemon, 1/2 cup lime juice from the bottles. It worked great, perfect amount of tartness. I also followed other recommendations regarding the 2 cans sweetened condensed milk and 4 egg yolks. Everyone at our July 4th celebration loved it! Oh yeah, and homemade graham cracker crust makes all the difference.

Ginger Steak

This was a great marinade! My husband and I were both surprised at how much flavor there was for only marinating for 30-40 minutes. The only change I made was to use Dijon mustard instead. It probably gave it just a little more zing. We will definitely be making this again.

Slow-Cooker Pork and Apple Curry

This was ok, but it had too much of a citrus flavor that just doesn't go with curry. If I make it again, I think I will try it with apple juice instead of orange juice, which to me makes more sense in an apple recipe anyway.
