Simple Ranchy Breaded Fish Fillets

Great recipe. I followed the reviews--coated the fish with egg first then coated with the bread crumb/ranch mixture. I then baked it at 400 degrees for about 35 minutes (my fish was a little frozen). DELICIOUS!!

Mediterranean Stuffed Chicken

If it were possible to rate 6 stars--this recipe would get it! I added spinach & roasted red peppers with the cheese mixture and switched out oregano/basil for the dill. Popped it all in a food processor to make my life easier. Wrapped in twine and sauteed with a little EVOO & a healthy amount of lemon juice. After searing I put into the oven to cook, turning the chicken a few times to infuse the lemon. On the side I served rice (for 4 servings, called for 2 cups of chix stock--subbed out last 1/4 cup with lemon juice). I added wilted spinach & more diced roasted red peppers to the liquid mixture before adding the rice--top with feta in the rice if you're a huge feta fan like me...SO good!! Served with a basic sauteed green bean for the veg. SO GOOD!!!

Easy Ground Beef Stroganoff

When I think of Beef Stroganoff I think creamy--to get the creamy I substituted the 1.5 cups water for milk with the flour mixture. Gave it the creamy texture needed. I'm also a mushroom lover so I added 2 cans of mushrooms. Just beware-this is a meal you will eat with your sense of smell & taste--not sight! Looks like dog food but tastes delish!!

this is good but mine turned out SPICY! I recommend Franks Buffalo Sauce. I added a little extra ranch and butter to try and counter the heat (and I like spice!!)

Marinade for Chicken

VERY good! This is definitely a large recipe so I cut it in half for 6 thighs. The longer you marinade (aka I didn't end up cooking it for 36 hours...so good!) the BETTER!!

Spicy Italian Pork Cutlets

this recipe made a delicious, moist meal. I was really shocked that the pork chops came out so moist!! I used a can of diced tomatoes (partially drained but I would recommend using all the juices) and chicken stock (no wine in the house). No need to bake the chops if you pound them out--let them simmer in the sauce while the side of pasta cooks--YUM!

Salsa Chicken Rice Casserole

Loved the flavors of this dish but I found it pretty watery. I made my own cream of chicken & mushroom soups (I have celiac so I need a gluten-free option). Try to go for a good quality salsa to avoid the watery bottom (or just a slotted spoon!). Either way--YUM!

Easy Meatloaf

I finally got my husband to say "wow this meatloaf is really good!" He pretends he doesn't like meatloaf but he finally admitted this was a good recipe! The glaze on top was great--i did double it. Inside I added more seasonings--italian seasonings, s&p, etc, as well as diced green bell pepper. Definitely will make this again!

Cola Pork Chops

Great recipe--I took the advice of the other reviewers: 1/2 BBQ, 1/2 ketchup with the cola mixture. I also floured (seasoned) & browned the chops first. I also put the cornstarch in the marinade to help thicken. Warning--make sure the bottom of your oven has foil or something b/c this dish bubbles quite a bit and makes a mess--well worth the mess though!!!

Penne with Pancetta and Mushrooms

Not sure if I missed something but I found it very bland...for all the fat & calories I was disappointed. I used bacon for lack of pancetta. I would recommend adding chopped onion, more garlic, and black pepper for flavor. 1T of butter is plenty if you don't wipe the pan off after the bacon.

Delicious Black Bean Burritos

I found nothing special about the recipe unfortunately. I was really excited to try it out but it turned out very bland. I think black beans are heavy and with the cream cheese it needed something to cut through the heavy, dark flavor--possibly tomato-based (canned tomatoes with lime juice maybe?) and a spanish rice inside??

Easy Tilapia

good basic recipe. Added a little garlic powder, paprika, and a very small shake of cayenne (we love the heat) to the fish before cooking. Only used 2TB butter and that was still a little much--will cut down to 1TB next time. Didn't bother putting the fish back in between wine & butter...really not necessary.

Home Style Macaroni and Cheese

It's hard to rate this recipe b/c I used rach8986's suggestions when making mine. I didn't have provolone but instead used a mixture of yellow & white cheddars with the cream cheese & mozz. My cheese mixture was super thick so I had to use more milk & heavy cream and even added a little Velvetta into the mix to soften it up...the key to the recipe is don't buy pre-shredded cheese! It's a pain but most are very dehydrated and you need the moisture to make a nice creamy mac & cheese. Thanks to all submitters for their suggestions. My guests RAVED about it!

Philly Steak Sandwich

Loved the seasoning in the steak. Diced up a red pepper, sweet onion, and mushrooms and sauteed them in. Layered them with american cheese and broiled them for a few minutes. The more cheese the better!

Slow Cooker Pineapple Pork Roast

Great with modifications suggested by other readers. I layered the bottom with onions, then placed 2 pork tenderloins down and seasoned them with thyme, pepper, a small amount of seasoned salt, and cayenne pepper. I then poured in some teriayaki sauce, a can of diced pineapples with juice, and a can of whole cranberry sauce (mushed first). I topped it off with a little chicken broth to make sure the meat was covered. Then covered and put on low for 8+ hours. The pork was so incredibly flavorful and tender. Barely needed a knife to cut it! Would def. recommend with moderations above. Thanks to users who experimented!

Slow Cooker Lemon Garlic Chicken II

Good recipe--comes out so tender for such a short time (for a slow cooker). Skipped browning, used tenders. Used other users comments by using more water (used 1 cup). Next time will use 2 cups--a little too much lemon for me. Layered with onions on the bottom like recommended. Yum!
