Mexican-Style Goulash

Great meal. Pretty much American Chop Suey, Mexican style. I used a full can of Mexicorn (with peppers) instead of regular and used double the chili powder and the same amount of cumin.

Italian Chicken and Chickpeas

I LOVED this meal. I would rate it 5 stars BUT the amount of spice is far too high. I'm a big fan of spicy but I cut the cayenne & red pepper flakes in half and it still had quite the kick. I would definitely recommend this and will be cooking again, just with about 1/2 the spice. I served with a small side of pasta but I found it held up great without it.

Chicken Breasts Pierre

The chicken came out great but the sauce was WEIRD (and not in a good way). Sweet but tangy...just not our style. I used diced tomatoes instead of stewed b/c I heard stewed made it a little sweeter. Still not a huge fan...

Fettuccine with Sweet Pepper-Cayenne Sauce

I really liked the flavor from the bell peppers. Into the saute I added about 1/2 cup of diced tomatoes and an extra clove of garlic. I used fat free sour cream so the sauce was a little thinner. Based on others' suggestions I used 1/2 cup of broth, added a pinch of oregano & basil, and cut the cayenne to 1/2tsp. Your sauce will be thin at first until you put the parmesan cheese in it. I would also recommend not rinsing your pasta--the extra starch serves as a great thickener.

Libby's® Famous Pumpkin Pie

The pie is delicious. It took a little bit longer than stated but maybe by 5-8 minutes. I covered the edges of the pie crust after about 25-30 minutes to avoid burning. I also used 1 3/4 tsp. of pumpkin pie spice instead of the ginger/cloves/cinnamon, as stated on the Libby's can for substitution. Serve with whipped topping!

Pork Medallions

The gravy in this dish is delicious! I used Bell's seasoning instead of the rosemary/savory . The pork was a little tough but I think it was my choice of using a pork chop cut into medallions. Definitely a great recipe. Double the gravy for yummy mashed!

Banana Crumb Muffins

YUM! I followed others' suggestions of adding the cinnamon, nutmeg, and vanilla in my batter, as well as substituting oil for the melted butter. The crumble is delicious. Took about 23 minutes for mine to cook in unlined cupcake tin.

Mushroom Stuffed Zucchini

As the recipe is, I give it 4 stars. 2nd time around I made some improvements: I didn't have fresh red bell peppers in the house so I used a small jar of roasted red peppers. I also added 1/2 a small onion. The mixture was a little too mushy so I added a few tablespoons of breadcrumbs to the stuffing as well as additional salt & pepper to taste. Topped with a very small amount of parmesan and cheddar cheese before broiling. I also found that 10 minutes was too long for boiling--I had HUGE zucchini and I feel it only took approx. 8 minutes

This was just ok. It lacked in flavor. I think next time I will add some seasonings to the cornstarch mixture--garlic powder, pepper, onion powder, maybe some dried cilantro and ginger as well.

Grill Master Chicken Wings

So so so so good!! After they were cooked, I dipped the wings in the sauce and put them on the top rack of the grill for about 10 minutes and then coated them again before serving.

Grilled Bruschetta Chicken

absolutely loved this recipe. I marinated the chicken a little longer since I had the time. I used canned diced tomatoes (drained) and dried basil b/c that is what I had. I will definitely make this again!

Crispy Fish

I'm sure this would be amazing deep fried but I went for a pan-fried version. My only complaint is it is WAY too spicy--and I LOVE my food hot. I will cut the spice in half next time but will def. make this again. Lots of flavor, delicious, just too much cayenne.
