My favorite things to cook
If I have to pick favorites, I suppose I'd say Mexican food would be my fave to prepare. But, I also love to make desserts, German dishes, Southern food, and just about anything Italian!
My favorite family cooking traditions
Making enchiladas is a family activity for us, everyone gets in the kitchen and works it! Also, (of course) the weekend barbecue, and making a big Cajun boiling pot. (There's no better way to get everyone home faster than with a boiling pot night!)
My cooking triumphs
The day I finally felt I had perfected my salsa verde. Also, making the meanest Jambalaya ever, and making the best "it's lowfat, but tastes like pure sin" key lime cheesecake.
My cooking tragedies
I can't make candy!!! I can bake and make desserts till the cows come home, but I can't make candy to save my life. Don't know what's up with that.

Eggplant Pepper Relish
This was delicious! Although I did modify it somewhat to suit our needs. The only thing I added was an onion, and I put everything in the blender when it was done and pureed it to make a smooth dip which we ate with pita chips. Wonderful and healthy! The next day, I thinned out the leftover with a bit of chicken stock and added some basil, and used it as a pasta sauce, which worked beautifully!

Easiest Eggplant
This recipe is wonderful! It turned out perfectly. I used low fat mayo and panko breadcrumbs seasoned with garlic and cajun seasoning. Everyone loved it, and they have already requested that I make it again soon! We ate these with homemade marinara sauce on the side and sauteed zucchini and onions. Thank you for a great recipe that we will make over and over!
