Baked Potato Soup

Love it. Exactly what I was looking for. I changed it somewhat based upon what I had: (used 5 pieces of bacon & all its grease, 5 red potatoes, 1 celery stalk, 3 gloves garlic, 1.5 onions, heaping tablespoon sour cream, and just used regular milk). I used a hand held blender to puree most of the soup and potatoes. I reserved two chopped baked potatoes to add after having pureed soup.

Crustless Spinach Quiche

Wonderful. I cooked mine in muffin tins as suggested by another reviewer. If your pans are non-stick, cook at 325 degrees. I just used up all different kinds of cheese I had in the house. Tasted great, mmmm.

Quick and Easy Brownies

Fantastic. These are now MY brownies. For just a little extra uuummph, I add a handful of semi-sweet chocolate chips, chopped pecans, and a ribbon of caramel. Turtle brownies! You can make the caramel while putting all of the ingredients in the mixer. 13 caramel candies + 2.5 oz evaporated milk: microwave on low stirring occasionally until bubbling.

Classic Waffles

Oh so good. As recommended, I doubled the sugar and vanilla. I also beat the egg whites separately and then folded them in at the very last. The butter in this recipe really makes these oh so yummy (do not substitute). This was my first attempt at homemade waffles and they came out great!!

Basic Chicken Salad

What a wonderful chicken salad "base". I add about the same amount of chopped apple as I do celery. I substitute pecans for the almonds because pecans are just better! I also add just a little stone ground mustard, garlic powder, and onion powder. This is so yummy...perfect for the summer.

Red Lentil Curry

very good. Although I think you'd need more tomato. I reduced the amt of lentils by half but kept the tomatoes the same. I also sauteed cumin seeds with the onion and toward the end added some english peas. Yummy. This will be a part of our regular rotation.

White Bread For The Bread Machine

Try substituting the oil and sugar with butter and honey. It makes this wonderful bread recipe even that much better! Even as written, this bread comes out perfect. I love this very easy recipe.

Whole Wheat Honey Bread

Fantastic. I subbed 1/2 cup of bread flour instead of using all whole wheat flour, as stated in another review. I did not use any gluten as indicated in some reviews. It came out perfect as is. This is by far the best bread I have made with my bread machine.

Argentine Lentil Stew

Wow, this recipe is so good and a wonderful take on your regular lentil soup. I added chopped celery, doubled the garlic, used chicken stock instead of water, and substituted a 14.5 oz can of petite diced tomatoes for fresh ones. Put in all of you vegetable at the beginning if you want them soft, which I do. The addition of cumin powder, chili powder, and a few dashes of hot sauce makes this stew just right. Purée half of the soup for a rich consistency. Reserve the peas to add during the last couple minutes of cooking. I wouldn't purée the peas. This healthy, satisfying soup is a keeper. Serve with brown rice.

Fast Chicken Soup Base

Absolutely love this! I take what is leftover from a rotisserie chicken and make this base all the time.....talk about economical. The soups made from this base taste so authentic, such as you would expect from a restaurant. Really glad I came across this recipe. Thank you!

Green Chili Casserole

The recipe provided is a good place from which to start. I substituted a can of tomatoes and chilies instead of just chilies. After browning the meat&onions I added the can of tomatoes, turned the eye up to high and cooked out most of the liquid. I seasoned the beef mixture w taco seasoning, cumin powder, garlic powder and chili powder. Corn is good in this casserole too. I only used 4 tortillas. For the cheese I used white American and sharp cheddar. This is such a quick meal to throw together... serve with some black beans and you're set. We've had this twice in 1 week!

Peanut Butter Bars I

yummy. so quick and easy. I used 1/4 cup less sugar and didn't miss it. I went ahead and used 12 oz of chocolate and melted just a 1 T of peanut butter in it. I left the PB mixture in the frig for 15 mins, then topped with the chocolate and refrigerated for 10 more mins. I then cut into squares and returned the pan to the frig to continue getting hard. This kept them in pretty little squares and I will repeat this procedure when making this recipe again.

Spanish Rice II

Jodi Lynn's review has some really good tips for this recipe. Follow them. Although I never have bacon grease around, I just use vegetable oil. I also just sprinkle in the chili powder...2 tsp is way too much. I like to copy my local Mexican restaurant and toss in a little corn and finely diced carrot when adding the tomatoes. After I turn off the eye, I top the rice with some green peas so that it steams them. My local Mex place includes a small amt of these veggies in their rice and it just makes it that much more authentic to me. My husband and I love this rice!!

Bake Sale Lemon Bars

I was looking for a more dense, almost cream cheese-like consistency for the filling. Regardless, these turned out quite nicely. I followed the original recipe, but used an 8X8 pan and almost doubled the amount of fresh lemon juice. These went pretty fast and were a more than welcome addition to the sweets table on Memorial Day. Everything else brought contained chocolate. Having something a little tart really rounded out the selection of sweets offered.

Egg Salad Sandwiches

I do not know what I was looking for, but I certainly found it in this recipe! I used a tablespoon of finely minced sweet onion instead of onion flakes. I didn't have any dill so I used a combination of sweet&dill relish in my salad. Like other reviewers, I reduced the salt and also added paprika. This was so good. I will definitely be making this often. (For those saying that they found something to be missing, you may want to try a dash or two of hot sauce. It's a 'secret' ingredient in many mayo-based salads like this.)

Easy French Dip Sandwiches

This made such a quick, different meal for us this Friday night. I didn't have any consume, so I just reduced beef broth down to about a 1/4th. I added garlic powder & cracked pepper to the broth. We topped our sandwiches with roasted onions and peppers. As a side we had kettle chips, which were even good dipped in the 'sauce'. We'll be having this again.
