Baked Pasta Primavera Casserole

I am giving this 4 stars because it tasted great for being so incredibly easy. I followed the recipe except I used 1/2 cup less mozzarella (so, 1 & 1/2 instead of 2) and I used a different sauce (Classico Tomato Basil). I don't know if I was just hungry or what but I ate a ton of it. Very satisfying meal, but I wish I could lighten it up without losing flavor. Other than the cheese reduction, I'm not sure how it could be lightened.

Strawberry Pie II

I like the taste of this pie and adding the pure whipped cream is a nice touch. Real whipped cream (instead of some canned or tub version) is such an improvement. The whipped cream doesn't need added sugar b/c the pie is very sweet on it's own. My only complaint is that I have made this pie twice and chilled several hours like the recipe recommends, but it doesn't 'set' for me. When I take it out of the fridge, it appears set, but as soon as I cut into it, it runs all over. I think I will do as one of the recent reviewers said to avoid this problem in the future and see if that helps.

French Spring Soup

Yum! A vegetarian's dream. It's a very good use of the spring veggies.I followed the recipe exactly except for substituting half and half. If you are veg, but don't do dairy, rice milk would probably be okay. The potatoes help keep it thick. Enjoy!

Asparagus Cashew Rice Pilaf

I thought this was really good-ate all the leftovers... I followed the instuctions exactly and had no problems with threcipe. I follow a primarily vegetarian diet and I think with a soup or salad it would be substantial enough for a vegetarian entree.

Warm Mushroom Salad

I thought this was good, but I agree w/ the reviewer who said the ratios seemed off-not enough mushrooms, too many greens and maybe even a little too much balsamic for my taste. It was good, though and I think by altering the olive oil to balsamic ratio and doing more mushrooms it would be even better. I will also try adding some toasted pecans as someone else mentioned.
