Lentil Soup

This wasn't very good to me. I made it exactly as written and I am a big fan of lentils, but I wasn't impressed with this version of lentil soup.

Italian Summer Squash Polenta Bake

Yum! I made this as a vegetarian dinner entree. I followed the recipe exactly except that I made the polenta myself on the stove and then lined the casserole dish with it before baking. It is healthy and very easy. It can be time consuming in that there is a fair amount of chopping, but I think it is worth it.

Caramelized Red Bell Peppers and Onions

Tasty side dish and a good way to get some veggies in without a lot of fuss. I have to confess that I used all butter because lately, I've just been on a butter kick, but next time I will do it exactly as written. Also, I didn't have any red wine at home, but I'm pretty sure that would take the recipe up a notch. I feel bad reviewing it and only giving 3 starts since I didn't follow as written.

Chewy Coconut Cookies

These are so good and so easy. Made them just as written and they were all I had hoped they would be. Crispy outside, chewy inside. I cooked mine on parchment and they took 12 minutes. Yum.

Microwave Pralines

Love this recipe! So easy and everyone gobbles them up when I take them places. It takes a little practice to know when to stop stirring and start dropping, but once you get that part figured out, you will find this to be the easiest candy ever and so good!

Creamy Rice Pudding

I am scared I am going to eat all four servings of this recipe by myself-delicious! The best rice pudding I have ever made and/or eaten. I left out the raisins because I am not a fan and used 1% milk because that's what I had and the recipe didn't specify that it needed to be any particular milk. I used jasmine rice because I love it. Fantastic!

Angel's Pasta

Yum! This is sooo easy & quick. A recipe gets extra from me for being easy, quick AND tasty. It's a very simple, but very good pasta dish. I used fresh angel hair (as opposed to the dried kind), fresh grape tomatoes, and only one zucchini (for me, that was enough). I skipped the mozzarella in favor of shaved parm. Will make again, thanks!

Black Bean And Corn Salad II

I really like this salad, but now that I've made it a couple of times, I've modified it like other reviewers. My favorite way to prepare it is to reduce the oil to 1/4c (1/2c is just too much and a lot worse on the arteries), use an equal amount of corn & black beans (2c) and definitely keep the cilantro, but reduce it to 1/4c. I am not a huge fan of cilantro, but I think it's good in this recipe and 1/4c is just right.

Baked Pasta Primavera Casserole

I am giving this 4 stars because it tasted great for being so incredibly easy. I followed the recipe except I used 1/2 cup less mozzarella (so, 1 & 1/2 instead of 2) and I used a different sauce (Classico Tomato Basil). I don't know if I was just hungry or what but I ate a ton of it. Very satisfying meal, but I wish I could lighten it up without losing flavor. Other than the cheese reduction, I'm not sure how it could be lightened.

Strawberry Pie II

I like the taste of this pie and adding the pure whipped cream is a nice touch. Real whipped cream (instead of some canned or tub version) is such an improvement. The whipped cream doesn't need added sugar b/c the pie is very sweet on it's own. My only complaint is that I have made this pie twice and chilled several hours like the recipe recommends, but it doesn't 'set' for me. When I take it out of the fridge, it appears set, but as soon as I cut into it, it runs all over. I think I will do as one of the recent reviewers said to avoid this problem in the future and see if that helps.

French Spring Soup

Yum! A vegetarian's dream. It's a very good use of the spring veggies.I followed the recipe exactly except for substituting half and half. If you are veg, but don't do dairy, rice milk would probably be okay. The potatoes help keep it thick. Enjoy!

Asparagus Cashew Rice Pilaf

I thought this was really good-ate all the leftovers... I followed the instuctions exactly and had no problems with threcipe. I follow a primarily vegetarian diet and I think with a soup or salad it would be substantial enough for a vegetarian entree.

Warm Mushroom Salad

I thought this was good, but I agree w/ the reviewer who said the ratios seemed off-not enough mushrooms, too many greens and maybe even a little too much balsamic for my taste. It was good, though and I think by altering the olive oil to balsamic ratio and doing more mushrooms it would be even better. I will also try adding some toasted pecans as someone else mentioned.
