I'm a mom and a wife and I just love to cook. Most of the time I can find things in the fridge and make a meal out of it. I'm lucky because my family will try just about anything.
My favorite things to cook
I love to cook anything. I try not to fry foods but grill/roast/bake etc...I like to try new things.
My favorite family cooking traditions
I am the youngest of eight and my sister and I always get together and bake breads and cookies for Christmas and one of the recipes we use I found when I was in grade school. Others join us now. It's a LONG day but worth it.
My cooking triumphs
It seems when I try something for the first time it usually turns out PERFECT and then after that is when I have troubles...sometimes...haha...maybe I get too comfortable. I'm very good at looking at recipes and knowing right off if it will be good or not and what to change or how to make it healthier yet still tasty.
My cooking tragedies
I'm not patient so most of my "baking" trying to make deserts look pretty ends up being, let's say, not so pretty! My niece is in Culinary Arts School and loves baking and she is exceptional! This is something I don't have to worry about being good at anymore! yea

Chicken Puffs
I thought this was very tasty. I would definately make this again. The recipe was for 12 servings but mine made 8. I bought a can of reduced fat croissant rolls (of 8) and rolled them a little thinner and layed them into cupcake holders, filled them and just folded over the ends of the croissant and baked them as directed. I used all the filling. You can use this idea with lots of other fillings. Thanks!

Asparagus and Smoked Salmon Salad
I thought the combination of ingredients was very tastey however, the dressing left much to be desired. I would definately make this again but use a different dressing.

Greek Veggie Salad
This was very good and marinating over night is a must! Really soaks in the flavor and softens the veggies up just enough...I did add fresh basil. This is a keeper...thanks!
