Slow Cooker Chicken and Dumplings

I got a little nervous with the torn pieces of biscuit but it was actually very good. I think I will add a couple of things next time like celery. The dumplings may take getting used to but all in all, my family and I enjoyed it. Thank you.

Slow Cooker Creamed Corn

Really good comfort food. My mother used to serve canned creamed corn. Never did like creamed corn served out of a can so never ate it no matter where it came from. But knowing the difference between fresh cooked and canned, I decided to try it. I did use sweetened condensed milk and a little bit of brown sugar instead of white sugar. I think the cream cheese was a bit overboard for me. next time, I'll use half as much. But overall, I thought this was great.

Coconut Curry Tofu

Minus the chile paste, just because I didn't have any on hand, this was an excellent dish. I did like another reviewer and sauteed my mushrooms with garlic and olive oil but stayed on track for the rest. Really enjoyed it. Thanks!

Golden Rice Cakes with Sweet Potato-Ginger Sauce

Well I have to say, I really didn't follow the directions all that well. I, for the most part, just threw most of my ingredients in the blender and added that chunky paste to my rice. I did boil my coconut milk and ginger but I had hungry men passing the kitchen acting as if they've never had a meal in their lives. I only added one egg and mixed it all together to make patties but it was kind of messy in the pan. I ended up creating a fried rice topped with pan fried tofu, sauteed red peppers, red onion, cilantro, fresh spinach and garlic. I really liked the saltiness of the tofu against the sweet potatoe and ginger. The guys weren't terribly impressed but they gobbled it down. I refridgerated what I didn't fry and thanks to the temperature, I was able to make my patties and fried them up for lunch the next day for my neighbor and myself. She loved them. They taste better as golden rice CAKES not fried rice. Overall, I enjoyed this recipe and plan to do it again. Maybe I'll follow the directions next time... or maybe I won't. Thank you for such a unique dish.

Greek Orzo Salad

I enjoyed this meal a lot. I substituted the artichokes with some leftover chicken that was simply marinated in balsamic vinegar. And my feta was looking kind of old sitting the back of the fridge so I used parmesean cheese. Other than that, I kept with the recipe.

Rosemary Ranch Chicken Kabobs

I didn't find this all that tasty. I used organic ranch but I must face the fact that I just don't like ranch dressing at all. There were leftovers so I served my boys the cold chicken over iceberg lettuce for lunch. I had a grilled cheese.

Mmmmm Gooda! The fam's fave yet! I did substitute bacon for spinach because that would have been meat overload for me. But I can imagine the smoky flavor of the gouda and the bacon coming together nicely.

We ate this for a month. I loved it so much I just kept making it. My 12 year old son pleaded for a meal with meat finally so I had to find a new recipe that was more his speed. Just to keep the peace for a little while.

Well with omitting the mushrooms and adding a 1/4 of my black-n-tan that I had opened to drink, I found it to be a great dish! I spiced it up too much for the baby to enjoy, but the rest of the family found it tasty, too!

Mexican Style Shredded Pork

My family enjoyed this dish quite a bit. I asked was it a 4-star or 5-star meal. The said 5! I only changed one thing: I added the cilantro to the cooked rice and let it sit for a few minutes before serving instead of cooking it in with the rice. Leftovers became pulled pork sandwiches on toasted wheat buns for a summer's afternoon lunch. Thanks!

Butter Bean Burgers

My family was impressed as I'm trying to get them excited about more vegetarian meals in our home. I sent my husband to get a couple cans of butter beans and he came back with "seasoned butter beans" with onions. I wasn't sure but tried it anyway following the recipe pretty closely. The only other changes I made was to make it less sloppy by adding more bread crumbs and coating the patties in crumbled salt-n-pepper kettle chips for crispiness. My husband wanted more, my 12 year old son appreciated his hunger being satisfied but didn't want seconds. But this is also coming from the kid who, for years, thought being a vegetarian meant only eating hotdogs. We'll be having this again. Thank you!
