I am a married mother of two teenage boys. My husband Tom and I have been together for 11 years and love everyday I get to spend with him. My boys, Patrick and Spencer, are 15 and 17 and keep me on my toes every day.
My favorite things to cook
Italian and Mexican
My favorite family cooking traditions
I don't have any real traditions, as my mother was not the best cook.
My cooking triumphs
Manicotti from scratch
My cooking tragedies
Haven't had any in a while, will have to think back. Hmm.

Best Easy Chicken Croquettes
These were very good. I didn't have any celery so just omitted it. I did add some garlic and basil and fried them in margarine. I didn't realize I had ran out of oil.

Shrimp and Feta Cheese Pasta
This dish was sooo good! I did as others recommended and used about a half cup of wine and half pound of pasta. I only had 4 oz. of feta and that was just the right amount. My husband who doesn't even like pasta went back for seconds and took leftovers for lunch today. Will definitely make this again.

Baked Pork Chops I
These were awesome. My husband who hates pork chops loved them. I have made these with thin cut and with thick cut. The thick cut is the best. You will not be disappointed.
