Lisa's Easy Chicken
This is great but I agree with others that garlic powder should be used instead of garlic salt. It was still yummy even though it was a bit too salty! I used chicken strips instead of cutlets, to make it more "fajita" -like. Also used about 2/3rds of a large can of diced tomatoes (drained) in place of regular tomatoes. Turned out pretty good!

Roasted Vegetable Lasagna
Wonderful recipe. I did add an extra clove of garlic to the roasted vegetables, also extra mozzarella to the lasagna. For added flavor, the tomato sauce I used was Bertolli's Tomato & Basil. Complimented the vegetables very nicely :)

Hearty Spanish Rice
This was a decent recipe with some potential. I made a couple of changes. I sauteed the onion for 5 minutes, then added the garlic and sauteed for a minute or two before adding the chicken. I also added a jalapena pepper (finely diced) with the pasta sauce, etc. Rice did come out a bit too watery, next time I may cut down to 3 cups and see if that helps.
