Vegetarian Shepherd's Pie

It was good but it was a little bland. I would reccomend more salt, pepper, and cumin. Also, mixing in some fresh cilantro or basil would probably be good. I added mushrooms and carrots to this dish and used fresh tomatoes instead of canned (maybe where the lack of salt came from) which I highly reccomend. I will definitely make this again, but with more seasonings.

Aunt Eileen's Stuffed Eggplant

It was a little bland. I squeezed lemon on top and that made it taste quite a bit better. I think it would taste better if you baked it with some marinara sauce on top. Will try this tomorrow night with the leftovers.

Black Bean and Rice Enchiladas

This was a really yummy recipe! I mixed a green tomatillo salsa into the filling instead of picante sauce. I used white rice instead of brown only because that's all I had (wouldn't reccomend that) and used a red bell pepper instead of green (just a personal preference). I reduced the amount of rice to a litte over a cup and it was perfect. I think it made the perfect amount of filling, it made 8 nicely stuffed enchiladas. I poured enchilada sauce on the bottom of the pan and then topped the enchiladas with more sauce. Served with salsa and guacamole from this site. I think next time I will double the sauce and add zuchinni to the filling. *UPDATE*: I just made these again but added a habanero pepper, carrots, zuchinni, and sweet potato to the filling and it was awesome! I used red salsa in the filling and used more sauce on top. It was great.

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

for flavor, this recipe definitely gets five stars, but for the complicated and time consuming directions I'm only going to give it four. Just mix the mangoes in with the salsa and instead of grilling the entire sandwhich just grill the bread alongside everything else. This recipe is also really good with fish, especially ahi. I also added wasabi to the mayo ( I used veggie mayo) and it was really yummy!

Fiery Fish Tacos with Crunchy Corn Salsa

I wouldn't reccomend tilapia, it's such a cheap fish. Ahi, ono (wahoo), or hamachi (yellowtail) are much better choices.
