About this Cook
I grew up on the island of Kauai in Hawaii. I love to surf and I can't live without the sun. I am currently a sophmore at the University of Hawaii Manoa, majoring in Global Environmental Science. Presently, my life's goal is to just surf better every day.
My favorite things to cook
I love a wide variety of food. I really like making Mexican food, the most underrated food genre ever. I am a vegetarian and love surprising people when they find out that delicious plate of food has not one scrap of meat on it! I also enjoy making Medditerranean and Middle Eastern dishes or using those types of flavors in more modern dishes.
My favorite family cooking traditions
My parents never cooked much since they both had full time jobs but during holidays like Thanksgiving and Christmas, my mom would go all out. For Thanksgiving, each of my family members have to make their own dish (except my dad, who gets to sit on the couch and watch sports on TV all day). Very traditional ;).
My cooking triumphs
This past Valentines Day, I coked my parents a wonderful four course meal. It was delicious if I do say so myself.
My cooking tragedies
I tried to make a spread kind of similar to hummus for dipping chips. I added some sesame oil, okay waaaaaay too much sesame oil (that stuff is potent). It was pretty rough eating.

Vegetarian Shepherd's Pie
It was good but it was a little bland. I would reccomend more salt, pepper, and cumin. Also, mixing in some fresh cilantro or basil would probably be good. I added mushrooms and carrots to this dish and used fresh tomatoes instead of canned (maybe where the lack of salt came from) which I highly reccomend. I will definitely make this again, but with more seasonings.

Aunt Eileen's Stuffed Eggplant
It was a little bland. I squeezed lemon on top and that made it taste quite a bit better. I think it would taste better if you baked it with some marinara sauce on top. Will try this tomorrow night with the leftovers.
