Easy Chicken and Broccoli Casserole

Hi! This is my recipe. I always cook the rice in the microwave because it's faster. I add 1 c. uncooked rice and 2 c. water in a large bowl, cover with plastic wrap and microwave for around 20 mins. Also, I steam the broccoli. You can also use 2 pkgs of frozen broccoli to save cook time. The recipe takes a while to make, but it is worth it. You can also make it the day ahead of time and bake in the oven when you are ready to eat. It might need a little longer to bake if its chilled all the way through. Enjoy!

Double Chocolate Brownie Cake

Wonderful cake! Very moist and over the top chocolate! I only used 1 cup of chocolate chips. I think 2 cups would have been way too much.

Classic Waffles

Great waffles! I followed the recipe as is, but added 2 additional tablespoons of sugar. I ended up with 5 large waffles. Leftovers heated great in the toaster oven.

This recipe was very easy to make. I followed the recipe exactly as written and it came out great. I used three golden delicious apples and one fiji apple. It had a great flavor and the amount of cinnamon was perfect.

Grilled Turkey Reubens

This was a tasty sandwich! It's great for a quick lunch or dinner. I didn't change a thing and it came out great. It's a unique twist to the classic reuben. This recipe is a keeper in our house.

Wife Saver French Toast

This was a delicious and easy to prepare recipe. I love being able to put breakfast together the night before and just pop it in the oven in the morning. I had to tweak the recipe a little because I only had a demi loaf of day old French bread. I was able to get 8 small 1 inch slices out of the loaf. I was going to halve the recipe but ended up just tweaking it a little. Here are the changes I made: 1/2 c brown sugar, 1/4 c light corn syrup, 8 slices of french bread, 1 3/4 c 2% milk. Everything else I left the same. I baked it in an 8x8 glass baking dish. I mixed together the cinnamon and sugar mixture but ended up only using a little over half because that seems like enough. I baked 50 mins and it came out of the oven perfect! My husband loved it, so I will be making this again in the future!

Chili-Lime Chicken Kabobs

This is a very flavorful recipe. I doubled the marinade because I used close to 2 pounds of chicken. I marinated for 3 1/2 hours and the flavors were wonderful. The only thing I changed when doubling the marinade was I used the juice of 3 limes instead of 2. I would say this recipe is close to what you would get in a restaurant. We also grilled veggies. Next time I might marinate the veggies too. I will be making this recipe several times this summer.

To Die For Blueberry Muffins

These have to be the best blueberry muffins I have ever had! I followed Chef Joy's instructions for a fail proof topping (using less butter and brown sugar instead of white). I still didn't use all of the topping. I did have trouble with the muffin tops sticking to the pan even though I sprayed the whole pan, even the top with Pam. Next time I think I will grease the pan with butter flavored crisco and see if that keeps them from sticking. I got 8 large muffins out of this recipe. They were really good, only some fell apart when getting them out of the pan. They were a hit at Father's Day breakfast though!

This is a good recipe. I used a pound of ground mild sausage because that is what I had on hand. I only used a teaspoon of the basil because I ran out. I think that was plenty. More than that would be overwhelming. Next time I won't add as much parsley. Other than that it was a great recipe that I will make again. My one year old even liked it!

BBQ Tuna Fritters

I was a little leary when I read the title of this recipe, but it was wonderful! My husband even enjoyed it. I made a few minor changes because I didn't have everything on hand. Instead of hot pepper sauce I used a few dashes of hot sauce. I didn't have savory so I used 1/2 tsp of garlic powder and 1/4 tsp of thyme. The fritters turned out delicious! I put them in whole wheat pita pockets stuffed with lettuce and drizzled them with ranch dressing. I got 5 small patties out of the recipe. Next time I will make 4 patties so they will be slightly larger. It was a quick and easy dish to prepare. I will be making these in the future.

Best Ever Chocolate Chip Cookies III

This is the best cookie recipe I have ever tried! I have been using it for about 3 years. I always get rave reviews when I bake these cookies. I do however make a few changes to the recipe. I have never used the nuts because my husband doesn't like nuts in cookies. They still turn out perfect! Some times I use 1 1/2 cups of white chips and 1 1/2 of semi-sweet. Other times I use 3 cups of semi-sweet chips. You really can't go wrong with this recipe!
