Perfumed Coconut Cake

Made this for the first time today for a Mother's Day barbecue. Lots of coconut fans there. Everyone loved it, but I expected it to be much more moist. I did add a 1/2 cup of shredded coconut to the cake batter as one reviewer suggested. I made half the frosting which was plenty sweet but did not cover the entire cake as I'd hoped. Next time I'll underbake it just a few minutes and make the full amount of frosting. This was an easy recipe that yielded no leftovers. Thanks!

Mom's Country Gravy

My Southern hubby says this is what country gravy should taste like! Only change I made was to substitute butter for the oil. I serve it with CASSJW's "Chicken Fried Chicken" also from this site. So good.

Chicken Fried Chicken

Finally, a recipe all 3 of my kids love. If I don't make this for dinner at least once a week, they start to riot! The only change I made was to add an extra tsp. of seasoned salt per hubby's request. Goes great with "Mom's Country Gravy" also from this site.

Basic Chicken Salad

Wonderful recipe. Sometimes simplicity is best. I started with the "Boiled Chicken" recipe from this site. Make sure you cool the chicken in the broth to keep it moist. The salad was just right, not too creamy and definitely tasted home-made. Didn't add the almonds per hubby's request. We both loved it!

Coconut Pie

I used a frozen deep dish pie crust, added a TBSP or two more flaked coconut and replaced the milk with an equal amount of canned coconut milk (found in the Asian or Hispanic food aisle of your grocery store). My Southern husband said it tastes just like his Grandma used to make. Delicious and addictive!
