Apple Bundt Cake

I used 3 cups of Granny Smith apples, 1.5 tsp of cinnamon instead of 1 tsp, and I used only 1 cup of brown sugar in place of the 2 cups of white, which was plenty sweet for me. I folded the apples and nuts in with the batter rather than layering them. I drizzled the cake with the caramel sauce recommended by another reviewer (1/2 cup butter, 1/2 cup brown sugar and 2 teaspoons milk, heated to a boil for 2 minutes). Delicious!

Overnight Cinnamon Rolls I

Very good! I added chopped pecans, pressed the filling into the dough with my fingers before rolling to keep it from fallin gout, and used melted butter instead of corn syrup for the icing.

Basic Beef Stock

Made it as read except I roasted the bones for an hour before preparing the stock and added extra potato instead of parsnip. There was a ton of fat that congealed on the top when I let it cool, which I skimmed off. So don't leave out that step.

Summer Salad with Cumin-Crusted Salmon

I was really impressed with this recipe, both the taste and the quick preparation time. I used half the oil, skipped the feta and cilantro, and replaced pine nuts with sunflower seeds. Fantastic!

Perfect Pumpkin Pie

I used fresh pumpkin from a medium sugar pumpkin, which came to about 4 cups of pumpkin. So I doubled the recipe to match, except for the condensed milk - one can of the fat-free variety was sweet enough. Two cans would've been overkill/diabetes-inducing. I also used homemade pie crust, which I pre-baked prior to use. Great! Also note that 1 tsp of pumpkin pie spice is 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg. So using pumpkin pie spice instead of the recommended spices is really no change; they're the same spices.

Fantastic! I followed Firefly's advice for mixing the dough, and these came out perfect. After the initial baking, I toasted each side for 10 minutes to make them extra crispy.

Baked Corn

Very good! I used half the butter, 1.5 times the sour cream, a splash or two of buttermilk, and fresh corn instead of canned. It was very yummy, but I think I would add more milk next time, as it was more bread-like, and I was hoping for more of a spoonbread.

Easy Indian Style Okra

Very good. I used frozen okra, added a little leftover tomato sauce, added 1 tsp of garam masala to the spice mix, and cooked for around 15 minutes. Came out perfect.

Ranch Dressing II

Fantastic! Doubled all the herbs and spices, used 1/2 cup mayo, 1/2 cup lite sour cream, and 1/2 cup fat-free buttermilk. Added a bit more buttermilk to thin for salad dressing. Absolutely delicious!
