About this Cook
I live in Richmond VA with my husband. I have been eating a vegetarian diet for over 30 years. I like to garden, travel and watch the birds on my bird feeder in the back yard.
My favorite things to cook
Pasta, pizza, bread in my 2 bread machines. I used to bake muffins and cookies a lot but not so much anymore. In the summer I like to grill veggie sausages and potatoes and squash.
My favorite family cooking traditions
My mother made the best pies. She made the flakiest crusts using either crisco or margarine and an old fashioned pastry blender. I have only come close to this using a food processor and butter. Mom never use butter and she grew up on a dairy farm.

Penne Pasta with Cannellini Beans and Escarole
I have made this when I can find escarole and it is very good. A bean and escarole dish should taste like beans and escarole. If you don't like beans and escarole don't make this dish.
