Peanut Butter Bars I

I made these bars for my husband's birthday because he loves Reese's PB cups. They are wonderful! The only change I made to the recipe is instead of adding the 4 TBSP of PB to the melted chocolate chips, I added a bag of the Reese's PB chips. I did that because I had a bag left over from baking last year and wanted to use it up before it expired. I put the PB base in the fridge for about 15 minutes before I put the chocolate topping on. Then after I put the topping on I let it set out for about a half hour then put it in the fridge for about an hour to set. They get too hard if kept in the fridge so I keep them on the counter and haven't had any problems with the layers separating or with cutting them. They're very rich butI will be making these again soon!

Dill Pickles

I tried these last year and they turned out perfect. The lids sealed without much processing in the water bath. This year I am having such a hard time with the lids sealing that I have to process them twice. So I'm sure they'll be nice and mushy, even though I did use some pickling lime. I'll have to wait a few weeks and see what happens.

Banana Crumb Muffins

I made this as banana bread instead of muffins. I baked it at 375 degrees for approx. 30 minutes. I didn't make the crumb topping because I didn't have any brown sugar on hand. I also used 4 smaller bananas instead of the 3 and the bread came out absolutely delicious! I've always had bad luck with banana bread in the past but now I've found a keeper. Thanks!

Late-Night Breadsticks

Very good recipe! I served them with pizza sauce since that's all I had on hand and they went well together. The only thing I did differently was I baked it at 375 degrees for about 15 minutes. I didn't feel very comfortable putting them in at a higher temp. I will definitely make these over and over again!

Green Tomato Relish

I made some of this the first week of November and gave it to my dad for Christmas. He says it's the best relish he's ever had! I used cucumbers instead of green tomatoes though.

I made these to give to the in-laws for their yellow lab. I used beef broth instead of milk. The dog went crazy for these, but they did give her a bad upset stomach after eating only 1.

Absolutely love this stuff! Is a touch on the sweet side too, but still very good. I did do a couple of things differently though. First of all, I couldn’t find any cream of coconut so I substituted a can of the sweetened condensed milk and 1 tsp coconut extract for that. Secondly, I didn’t add any rum because my son may want to drink some. So I may add a bit to a glass I have later. And not just any rum, I will try Malibu coconut rum. After it was done in the blender I put it in some cleaned out wine bottles and set them outside for a couple of hours. They ended up freezing (because it’s 30 below today) but thawed in a short period of time. Will definitely make this again for Christmas!

Peppermint Brittle

Very good recipe! I used 1 1/2 packages of white almond bark and used 12 big candy canes instead of the little ones. My only problem was I stirred the candy canes in too much and it turned pink in some spots. There's a lot of peppermint flavor so I don't think there's a need to add any peppermint extract. I think I will make these for Christmas gifts! Thanks!

Oven Roasted Potatoes

After reading many reviews on this recipe, I was excited to try it. I followed the recipe except I didn't put in any dill weed and I baked it at 350 for 50 minutes. I thought they were a bit bland. I really don't understand how some of the reviewers think it has too many different spices and needs to be toned down a bit. I personally think it needs more of something. Maybe more salt. But I think I will make this again.

The Best Rolled Sugar Cookies

I cannot believe how good these cookies turned out! And they're so incredibly easy to make! Instead of letting the dough chill in the fridge for an hour or overnight, I put it in the freezer for half of an hour. It came out a bit hard, but after working with it for a couple of minutes, it was perfect. Days after making them, they're still soft!

Bread Bowls

I made this last night to go with a chili I also made from this site. I halved the recipe to make 4 bread bowls and also halved the sugar as suggested. So the flavor was pretty good. I did have a hard time though rolling them into a ball and making them stay that way without cracking. Also, they did turn out a bit smaller than I had envisioned. All in all, I will make this again but I think I will halve the recipe and make to bigger bowls instead of 4 small ones. I might also try making rolls using this recipe.

Eileen's Spicy Gingerbread Men

This was my first time making Gingerbread Men and I could not have asked for them to turn out any better! The only thing I did differently was I followed some other reviewers' advice and only used a teaspoon of the ground cloves. Next time I make them I think I may use the full tablespoon. For the icing, I followed what one reviewer used and did 1 cup of powdered sugar, 1 whipped egg white and a 1/4 tsp. vanilla. I thought it was a little runny but ended up turning out pretty good. All in all, I will definitely make this again!

Big Soft Ginger Cookies

Very good cookies! The only thing I changed was I used butter instead of margarine because butter was all I had. The cooking time was a few minutes longer than the suggested time also. Turned out great! Will definitely make again!

Homemade Chicken Fettuccine

Made this for dinner the other night. I altered the recipe though. I feel bad rating it, but I did use it as a base recipe. I didn’t have any heavy cream on hand (never do) so I made my own using milk & butter. I ended up adding 2 sticks (yes 2 sticks!!) of butter total because I love it buttery. I added a lot of garlic salt to the chicken as it cooked in the frying pan & added more to the heavy cream mixture. Added some lemon pepper too. Very unhealthy but very good! Especially as leftovers! I was trying to make this chicken fettuccine from a restaurant that doesn’t make it anymore.

Taco Seasoning I

Summertime Sweet Pickles

I thought they had a bit too much of a vinegary taste. They were good though. I may have to do some tweeking to fit my tastes more. **Update** I think they tasted too vinegary to me because i actually put them in the pressure canner and let them sit (without it being in the fridge). So I let it sit in the fridge 3 days and the taste is a lot better!! Moves it up to 5 stars
