Pumpkin Cake I

Followed the recipe exact. Greased the pan extremely well. Cooked cake exactly 1 hr until toothpick came out clean. Waited exactly 5 minutes and turned out on plate per instructions. And ended up with a big mess as the cake stuck in the pan terribly. Tastes OK, but is a shredded mess. Gonna have to figure out how to serve as trifle instead... ugh!

Triple the Ginger Cookies

Had some extra ginger around the house to use up, and these cookies were the perfect use. Loved the great ginger flavor! The only thing I'd change is to bake a little longer than directed (or maybe my oven is just off), because mine were a little underdone. I didn't care though. I could eat this dough raw... it's so good!

Apple Pie by Grandma Ople

Pretty good, but not the best apple pie I've ever made. Made with a mix of Granny Smith and Gala apples. Next time think I'll use all Galas. The Galas cooked perfectly, but the Granny's still seemed a little underdone when cooked per the directions. Also, the sauce was pretty soupy at the bottom of the pie. Might try cooking the sauce for longer on the stove next time or adding some cornstarch to help thicken more.

Pork Medallions with Sauteed Apples

This was very good. Made it for my husband and his grandfather and got lots of compliments. The only thing I did differently was to cook the pork in a pan on the stove top, rather than broil.

Spinach Linguine with Tomato Sauce

So good! Scaled the recipe down and reduced the red pepper flake. Served with homemade spinach linguine. The plate was so pretty. Looked like Christmas with the red tomatoes and green pasta.

Sauteed Apples

Yum! Was looking for something a little sweet after dinner one fall evening, and this was it! Had all the ingredients on hand. Cut the recipe in half to make 4 servings... the servings size is kind of small... it is so good, it was more like 2 servings :)

Peaches and Cream Muffins

Yum. Cut the recipe in half since only had 1/2 cup sour cream and it was for only two of us anyway. No leftovers! Very moist and the chunks of peach were delicious. Muffin tops kind of sunk though. Some day I'll figure out the trick to puffed muffin tops :)

Beef and Pork Barbecue

Yum! This was incredible. Great sweet tomato flavor. Used cider vinegar as well. It was a little soupy. Not sure if that was because I used frozen veggies. Might add a little cornstarch next time to help it thicken.

Best Fried Green Tomatoes

I'd never had fried green tomatoes before, and this was a great first experience! Didn't have cornmeal, so just compensated with more flour and bread crumbs. The only change I would make would be to reduce the salt a bit. Served with pizza sauce and parmsean cheese.

Slow-Cooker Chicken Tortilla Soup

Yum! This was so good. Didn't have corn on hand, so left it out, but still was awesome anyway. Was having tile floor grout repaired while it was cooking in the slow cooker, and the repairman even asked me for my recipe it smelled so good... Tasted good too!

Shrimp Linguine

This was very good. Only had one fresh tomato on hand, so had to use a can of tomatoes that I drained. The flavors were great, but the sauce was a little soupy (probably from the canned tomato). Would cook the cream sauce a little longer next time to get it to thicken up before adding the shrimp, to make for a creamier sauce.

Strawnana Bread

Cut the recipe in half and used it to make muffins. Made 12 muffins. To prepare muffins, mixed ingredients by hand so not to over mix, left the strawberry and banana mixture a little chunky when mashing, filled muffin liners 3/4 full, and baked for 25 minutes. Made a wonderful muffin with a nice crispy top and great flavor with small chunks of strawberry and banana throughout. Also left out the orange zest, since I didn't have any in the house and many other reviewers commented on the orange flavor being overpowering. Thought it was the perfect mixture of strawberry and banana flavor without it.

Fresh Tomato, Basil and Cheese Pizza

Basic Truffles

This was incredible and so versatile. Had some bittersweet chocolate to use up, and this was perfect. Separated into three batches, flavoring one with vanilla, another with peppermint extract, and the third with rum extract. Rolled in various coatings, including powdered sugar, cocoa powder and chocolate sprinkles. All were great. Let thaw at room temperature about 30 mins before serving.

Waffles I

Very easy and quite good. Used one cup all purpose flour and one cup wheat flour (in an effort to use up some of the wheat flour I had on hand). Also served with fresh, homemade strawberry sauce, whipped cream and topped with cinnamon and powdered sugar.

BH&G Lemon Bars

Looked a little strange and bubbly when it came out of oven, and was a little messy. But covered with powdered sugar and set up after cooling OK. Taste was very good. Wonder if it would be any creamier with other lemon bar recipes that call for half and half.
