I put these ingredients in a slow-cooker and 3-4 hours later had the most delicous applesauce ever. So simple. So delicious. Perfect.

Tarragon Beef Stew with Vermouth

I had the pleasure of preparing this with Elk meat which is higly recommended, but nonetheless, the results were superb! As per reccommendation, I ommitted the mass amounts of water and as I do with all soup recipes I substituted a portion of the broth for an herbal tea as to reduce salt and add some other nutrients - turned out delish!

White Bean, Spinach, and Barley Stew

This was delicious! As stated, it is even better the next day so makes for the perfect prepare and take to lunch soup. The most common substitution I make with all soups is to use an herbal tea in place of the broth, a great way to add some nutrients and cut back on sodium.

I was able to use garden fresh green beans from my father, as well as some various peppers he had grown in his garden, it was a big hit with the in-law family, so it's a keeper!

Curried Vegetables

We enjoyed this dish, I went heavy on the jalapenos so it was a bit too spicy, so you'd be wise to stick with the recipe as written. Curry is a favorite flavor of ours, so overall, we truly enjoyed this dish.

Lemon-Butter Snow Peas

Used a bag of frozen peas - never as good as fresh peas, but they were a big hit at the dinner table - hope to try them fresh peas at some point. Made a great and easy side dish!

Baked Green Tomatoes

Nothing really beats fried...but these were all right. I did my own spice blend, including pepper, salt and a garlic and herb mixture. Next time, I think I'll try to flip them in the middle and perhaps dip the tomato slices in egg before the cornmeal.

We used bulk elk sausage - but other than that left the recipe as is. It was amazing! I had a hard time not hoarding the leftovers throughout the week - one the most enjoyable soups I made this winter.

Balsamic Vinegar and Ginger Bok Choy

Wonderful! I really wanted to eat this with Peanut Butter Noodles - so I swapped Soy Sauce for Balsamic Vinegar. I also did not have baby bok choy, but in my opinion, the dish was still enoyable!

Easiest Eggplant

Made this for a meat-eater who had never tried eggplant and he was pleasantly surprised, helped us finish them off even! I served them over Spaghetti noodles with Marinara sauce, very Eggplant Parmagiana-esque!

Butternut Squash and Spicy Sausage Soup

Used Antelope Sausage instead of Turkey - so that definitely changed the flavor a bit. I didn't follow directions exactly, is the likely reason that this is not my favorite recipe, but I'm enjoying it nonetheless and would highly recommend trying it in your home as well!

Peanut Butter Noodles

Loved this dish! Made a few changes due to lack of grocery-shopping motivation. I substituted a honey ginger green tea for the chicken broth and used only one garlic clove. I skipped the green onions and peanuts but found the noodles delicious! An easy peanut noodle to prepare and well worth it!
