About this Cook
I moved to Wilmington, NC in August of 2007, and before then I'd lived in Arizona all my life. I'm getting into the swing of southern cooking, but quite frequently I go back to the southwestern style cuisine I was raised on.
My favorite things to cook
I love to make desserts. Cookies, cakes, and anything sweet. I've never been good at making pie crust though... As far as actual meals go, my mom's taco meat! Along with old favorites, I enjoy trying new things. I love my crock pot and my wok.
My favorite family cooking traditions
I was raised on a lot of Mexican cuisine inspired/southwestern type foods because my family lives in Arizona. Tacos, tostadas, enchiladas, foods of that nature.
My cooking triumphs
I've gotta say, I'm pretty good at improv. If I've eaten something at least once, I can generally make something similar. It may not be spot on, but it'll definitely taste good.
My cooking tragedies
When I was 10 or 11, my aunt and I were making fudge, and we accidentally quadrupled the butter in the recipe. So what did we do? Went to the store and bought enough of the other ingredients to make a quadruple batch. As one could expect, the fudge lasted for months. We eventually finished it off by melting it down and using it in place of frosting for my dad's birthday cake. We called it the "Mud Cake" because I gotta tell you...it wasn't pretty. I thought I'd never eat fudge again.

Whit's Chicken Enchiladas
This recipe is awesome. I doubled the green chiles and used 2 jalapenos to give it a little more kick, but otherwise left the recipe intact. There's a Mexican restaurant where I live and my boyfriend's favorite dish is comparable to this, so I was ecstatic when these came out so great. Definitely one of our faves :-)

Strawberry Bread
I made this last night, in an 8x8 square and a 9x5 loaf (I only have one loaf pan right now). It came out awesome. My boyfriend even liked it and he's not a fan of strawberries (or any fruit for that matter...) I left out the pecans because I didn't have any (and he hates nuts in anything...picky boy) Also, I only used 1 cup of oil, and threw in one of those single serve cups of applesauce to make up the difference. I baked both pans at the same time, the 8x8 took about 50 mins and the loaf took 40. They came out awesome, and I'll definitely try it with pecans sometime when he's not around :-P Awesome recipe :-)
