Roasted Brussels Sprouts
Perfect! I love brussels sprouts but my husband isn't too fond of them. I've been trying for quite some time to find a brussels sprouts receipt he likes. This is it! He actually cleaned his plate. I kept a good eye on the sprouts to make sure they weren't getting too dark, but also added a splash of water every so often to keep them moist. That really seemed to help. Will definitely make this again - thanks for posting it. Sometimes the most simple recipes are the best!

Roasted Potatoes with Tomatoes, Basil, and Garlic
I did as Marysf suggested and used small red potatoes, steaming them first. Put them in the pan with the chopped up tomatoes and seasoning, and roasted it for around 25 minutes at 400F. Turned out excellent - even with dried rosemary (didn't have fresh). This recipe is a keeper. Thanks for posting it! Will definitely make again soon.

Quick and Easy Sauteed Spinach
I'm not really a spinach fan, but hubby is. I needed a really quick recipe to make for supper and found this one. Since we had a bag of spinach in the fridge, I figured I'd try it. Wow.. I wish I'd made more. Hubby hasn't stopped talking about what a great recipe this is yet, and I also like it. It's one that we'll definitely keep and have again - soon! Thanks for posting this.
