Baked Pork Chops I

This is the first time I really enjoyed pork chops!! I altered the recipe a little too. I also didnt cook as long maybe 20-30 min before I added soup mixture & another 20-30 after. I also fryed up extra mushrooms and onions and added it the soup mixture. YUMMY! I lightened my version as mush as possible too. Still great!

This is pretty close! It is a recipe from a favorite restuarant of ours...CHILI'S. These go great with honey mustard dip.

Beef and Bean Chimichangas

Love It. I actually cooked this at my in laws while the boys were working on snowmobiles and all 12 full sized burritos were gone. Everyone loved it including my 3 yr old and 18 month old. I followed other reviews, and mixed the beans right in the ground beef mixture. And I skipped the taco sauce and just used taco seasoning to season meat. I also add a little bit a salsa in the meat and beans. Just made this last night and I stirred the cheese right in the meat/bean mixture made it one step easier.

Brownie Caramel Cheesecake

Tasted oh so good. Did make alot of changes, I used a pillsbury dough brownie mix that had chucks of chocolate in it (it was good brownie mix!!!) I baked it for about 15 minutes. I let things cool before layering so they wouldn't all mix together. I lined the outside of pan with foil and put in a "bath". But I honestly can't remember how long I cooked it for I think I followed the cheesecake tips. It got ate, fast. The only reason I'm not giving it a 5 star is cuz all the changes.

I loved this. I served it at an all-girl get together I had. I used 1/2 cup of light dressing and I also used low-sodium black beans instead of olives, since I'm not a huge olive fan.

Chocolate Mint Cookies I

Mine were flat, so I messed up somewhere. But they were still great. And I used white & red peppermint hershey kisses. They worked perfect!!!!! Kinda looked like a peanut blossom.

Colorado Mexican Pizza

I made this awhile good. It was good I thought kinda of tricky to put together if I remember right but I think it was because I used small wheat tortillas. This could feed an army, I condensed the recipe and made it not so big, I left out the whole chicken layer and it was delicious.

Pumpkin Cheesecake II

I followed this recipe pretty exact. Except used nutmeg instead of mace and I also cooked with 2 pans of water on the rack below the cheesecake and it didn't crack and tasted great! Liked the pecans in graham cracker crust, nice touch. Also I did put the maple glaze on half the cheesecake and I thought it was great that way. My husband preferred it w/out the glaze.

Never Enough Green Bean Casserole

Loved it. Yum ;) I doubled recipe but only used one small can of mushrooms and I used 2 cans of the Kraft cheese w/ bacon I think thats what really gave it a good twist! My in-laws who dont normally do green bean casserole enjoyed it!

Spinach Manicotti

Made this one night for some friends and everyone seemed to enjoy it. Didnt have to make changes to the recipe. The only down side is it is hard to stuff the manicottis. Dont be afraid of the salsa, only makes it better.

Spinach Beef Stir-Fry

YUMMY and healthy! Woohoo. I didnt have spinach but I am sure its good with or without. I added more water cuz I have some big boys to feed. I did change the spice, I did about 1 cup water, 1-2 tsp of fajita seasoning, 1-2 tsp of beef bouillon. I served over brown rice. With some garlic bread.

Broiled Tilapia Parmesan

Very Good. First time I had Tilapia. Just made a few changes, added Italian bread crumbs, light mayo and light butter and left out the lemon juice. I also used my own seasonings in the parmesan mixture. It was delicious will be making it again!
