Chicken with Rice (Arroz con Pollo)

This is a great recipe for a cold day, but not heavy. I like to use white wine instead of water and prefer to simmer everything on the stovetop instead of transferring to the oven. It's also good with crab instead of chicken -- even the "fake" crabmeat is good for a lighter alternative.

Cuban Midnight Sandwich

I really liked the sandwich spread and will probably use it on other kinds of sandwiches. Since I had leftover Easter ham, the deli turkey was a better alternative to pork. For a touch of sweetness that I couldn't get from Cuban bread (unavailable in my area) I used bread-and-butter pickles. Grilled on a pannini press and enjoyed! Thanks for a great idea.

Classic Cuban Midnight (Medianoche) Sandwich

I too have problems finding the Cuban sweet rolls, so I use honey mustard instead of regular yellow mustard. (Don't use honey mustard dressing -- it tastes different.) It's the closest I've come to emulating the cubanos I loved in Miami.

Teri's Dinner in a Pumpkin

I was looking for a savory way to make stuffed acorn squash and this fit the bill. I took another reviewers suggestion and used curry instead of pumpkin pie spice, and hot Italian sausage. Instead of mushrooms, I chopped up some water chestnuts -- and I served the green beans on the side, since acorn squash is so much smaller of a vehicle than a pumpkin. Thanks Teri for the inspiration.
