I am a single mother of one very cool three year old boy, living with my parents. Grandma is a fantastic cook and has passed her skills and love of cooking on to me. We love to try new, unique recipes, and of course the classics as well.
My favorite things to cook
I love making Mexican dishes as this is one of my favorite kinds of food to eat! I am also always looking for ways to make any dish healthier and lighter while still tasting fabulous. I absolutely love fresh veggies and fruits, fresh salsas and salads are wonderful.
My cooking triumphs
I think the coolest thing I've ever made was a three dimensional Thomas the Tank Engine birthday cake for my son's third birthday. My best girlfriend and I stayed up until about 4am the night before the party making it. I think all told it took about 16 hours to make. He will be four here in a few moths, so I've gotta come up with something to top it!
My cooking tragedies
I was once making spinach artichoke dip (which I've since perfected) and the recipe called for 8 cloves of garlic. For some reason I interpreted it as 8 heads of garlic! The dip came out tasting absolutely wonderful (I LOVE garlic!!) but I smelled of garlic for a couple weeks afterward... I didn't realize my mistake until my boyfriend came over and was sitting next to me on the sofa and says, "Uh... Have you been eating garlic?" I was mortified! And of course will never live it down!

Baked Dijon Salmon
YUM! As I am sitting here savoring this delicious dish, I thought I ought to review it. The honey mustard sauce is fantastic with the salmon, especially with the nutty topping. I didn't have any pecans, so I substituted walnuts. Also I didn't brush the fillets with the sauce, I just poured it all into the baking dish with the salmon, then sprinkled the nut mixture on top. MMMMMmmmmmm, it's sooo good!

Curried Chicken 'N' Broccoli
Ok I just made this the way that Adam M suggested-- and it is WONDERFUL!!! But as far as the original recipe goes, I gave it a 4 because I had to change it up so much to be so good. But really, I know I should try it the way it's written before I review it, so I will do that next time around. Adam M should submit his recipe to the site to be published. It is just amazing, everyone should try it!

Creamy Rice Pudding
This is absolutely delicious! I used skim milk and added just a little cinnamon and vanilla. Yum, I just finished making this pudding and I'm sitting here eating it right now, it's just so good. My son loves it too, he's three and a half. Thanks for a great recipe! Oh, I also added a tsp of Fibersure to my serving, for some extra nutrition. Couldn't taste the difference at all.
