Apple Strudel Muffins
I used 2 cups of shredded apples, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 c sugar and 1/2 cup brown sugar, and I doubled the crumbly topping. Muffins were delicious and a hit with everyone in my family, including those who do not like apples!

Bacon Cheese Frittata
I added a some shredded potato to the eggs, but left as is. It took 45 minutes to cook, but my husband said it was the best breakfast dish I have ever made. Yummy and simple.

Baked Potato Soup I
I added spices to make it taste good. It was a very thick "soup." It actually solidified in the refrigerator overnight.
