Grilled Portobello Mushrooms

My first portabella! YUMMY! I added some balsamic and parmesan cheese! Grilled face down first then added mixture once I flipped the mushrooms! VERY Good! Thanks for sharing!

Garlicky Quinoa and Garbanzo Bean Salad

Wow! I've wanted to make this recipe for a while and finally did it today! VERY surprised! I'm new to Quinoa, so I cooked it w/ chicken broth. I also read other reviews and decided that I need "crunch" in a meatless meal, so I did NOT blanch the broccoli - just cut into smaller pieces. The only thing I changed was I took twice the garlic and infused the garlic, tarragon, and oil for about a minute or so... Awesome!

Mustard Chicken

I made this last night for 3 fussy eaters! Wow! They really liked it! It was time for a change with the "chicken." We took a few other suggestions, mixed a few different mustards and I even added a honey mustard mayo! I mixed panko and ff onions together! Very good! Pounded the chicken, baked on a broil pan w/ foil @ 350 for just about 25 minutes! A keeper for sure! Very moist and crunchy, too! I also added a canadian chicken seasoning! Clean up was a breeze! Thanks!

Waldorf Salad II

I made this for a ladies lunch and it was a hit. I added baked chicken, subbed red grapes for the raisins, and also used lemon juice to keep the apples from turning brown. Very good.. will make again! OH I forgot... I serve on croissants and the butter flavor added was awesome!

Pesto Turkey Burgers

**Wow!** So very surprised! We decided to start eating healthier and well.. I love my burgers! I didn't have high expectations, but must say - this was excellent. I probably added more garlic and pesto and we ate with whole grain light buns. I served with a salad! Yummy! I think the key is to make sure the ing. are really mixed well - meaning really get in there and knead them together!

Summer Shell Pasta Salad

You really should use Shell pasta with this recipe (it holds the asiago and/or feta cheese). I mix the oil, vinegar, and Ital. dressing, with seasoning in a small bowl and pour over entire salad! The pics submitted do not due this recipe justice! Next time I make, I will submit! I've actually been accused of "buying" delhi pasta salad when I make this recipe! They love it!!

Garlic Cheese Chicken Rollups

Very good! A keeper! I made the cheese spread by using cream cheese and garlic powder, onion powder, garlic salt, and chives. This is a great dish to make ahead and serve to company!!

Texas Ranch Potato Salad

I have been looking for "the" potato salad recipe for over a year! This is it! Easy, make ahead, and WOW - tastes great! I, too subbed the scream for 1 c. of mayo. and did not use bacon, but I bet that's even better. I'm making a 2nd time today and am having to sub the gr. onions for chives, so we'll see. 2nd day is even better! I just could NOT STOP eating this stuff!!

Chicken and Mushroom Chowder

I made this recipe tonight! I pretty much alway change things based on what I have on hand. I skipped the carrots (didn't have any) and added more mushrooms, but chopped vs. sliced. I added 1 c. beef broth because I already had one open. Seemed like most found the original bland, so I added about 3 chicken and 1 beef bouillon cubs. It really made the broth more flavorful. I also didn't have any rice, so I added egg noodles instead. We really love mushrooms, so thanks for sharing!

Egg Salad Sandwiches

This was my first go with egg salad. I could tell that after I followed the recipe it was going to be too creamy for my taste as well. I just added about 6 more eggs and it fixed my issue! Very good! I went a little easy on the salt and dill.

Scrumptious Salisbury Steak in Mushroom Gravy

This was really good!!! I had all of the ing. on hand and hubby really enjoyed. Next time I might cut back a little on the gravy (it almost makes too much) and add just a bit more seasoning. Thanx for sharing!!

Hot Chocolate Mix II

This same recipe has been in my family for years! My 3 yr old just loves it! I actually use a tall kitchen garbage bag to mix it, then cut a hole in the end to pour into containers. Enjoy!

Greek Pasta with Tomatoes and White Beans

Wow! Very tasty AND very fast! Even the "meat" eater in our house was very surprised! I added just a little sugar to the tomatoes (because granma always said to) and maybe a dash of garlic salt. And of course, more feta!

Zucchini Herb Casserole

Wow! I was quite surprised by this recipe! And I don't even like zucchini! I served as a side dish with chicken. I doubled the rice and spices and cut the cheese in half. I also used olive oil instead of vegetable. Definately a keeper!!
